Coffee replicas produced from individual components
Materials and methods for producing coffee replicas from individual components are provided herein. Such coffee replicas can comprise one or more volatile organic compounds (VOCs) and one or more non-volatile compounds. In some embodiments, the coffee replicas provided herein can have the form of a solution, a suspension, an emulsion, or a solid. For example, the coffee replica can be a coffee bean replica, a coffee grounds replica, a coffee granule replica, a coffee beverage replica (e.g., a ready-to-drink beverage) or a coffee concentrate replica.
1 . A coffee replica, wherein the coffee replica comprises:
a solid substrate comprising one or more of grape seeds, chickpeas, lentils, pea seeds, and a pea protein concentrate; and
an additive selected from a group consisting of an alcohol, an aldehyde, a ketone, an acid, an ester, a lactone, a phenol, a furan, a pyrrole, a pyridine, a pyrazine, a sulfur compound, and a mixture thereof;
wherein the coffee replica is a coffee bean replica or a coffee ground replica.
2 . The coffee replica of claim 1 , wherein the additive comprises the ketone, the phenol, and the pyrazine.
3 . The coffee replica of claim 1 , wherein the additive comprises the ketone, the phenol, the pyrazine, and the sulfur compound.
4 . The coffee replica of claim 1 , wherein the additive comprises at least five or more selected from the group consisting of the alcohol, the aldehyde, the ketone, the acid, the ester, the lactone, the phenol, the furan, the pyrrole, the pyridine, the pyrazine, and the sulfur compound.
5 . The coffee replica of claim 1 , wherein the additive comprises at least seven or more selected from the group consisting of the alcohol, the aldehyde, the ketone, the acid, the ester, the lactone, the phenol, the furan, the pyrrole, the pyridine, the pyrazine, and the sulfur compound.
6 . The coffee replica of claim 1 , wherein at least one ketone is selected from the group consisting of 2,3-butanedione, 2,3-hexanedione, and 2,3-pentadione;
wherein at least one phenol is selected from the group consisting of 2,5-dimethylphenol, 2-methoxy-4-methylphenol, 4-ethyl guaiacol, 4-ethyl phenol, guaiacol, p-cresol, 4-ethylguaiacol, 4-vinylphenol, and syringol;
wherein at least one pyrazine is selected from the group consisting of 2,3-diethylpyrazine, 2,5-dimethylpyrazine, 2,6-dimethylpyrazine, 2-isobutyl-3-methoxypyrazine (IBMP), 2-isobutyl-3-methyl pyrazine, and 2-isopropyl-3-methoxypyrazine; and
wherein at least one sulfur compound is selected from the group consisting of diethyl disulfide, dimethyl disulfide, dimethyl sulfide, dimethyl sulfoxide, dimethyl trisulfide, methanethiol, and methional.
7 . The coffee replica of claim 1 , further comprising one or more of a sugar, a sugar alcohol, an amino acid, a protein, and a peptide.

The coffee replica of claim 7 , wherein at least one sugar or sugar alcohol is selected from the group consisting of arabitol, fructose, galactose, glucosamine, glucose, mannitol, mannose, inositol, rhamnose, ribose, sorbitol, xylose, or a combination thereof; and/or wherein the protein comprises rice protein concentrate, pea protein concentrate, zein protein, and carnosine.

The coffee replica of claim 7 , wherein at least one amino acid is selected from the group consisting of arginine, asparagine, aspartic acid, beta-alanine, betaine, carnitine, choline, citrulline, cysteine, cystine, gamma-aminobutyric acid (GABA), glutamic acid, glutamine, glycine, histidine, homoserine, isoleucine, leucine, lysine, methionine, ornithine, phenylalanine, pipecolinic acid, proline, serine, threonine, trans-4-hydroxyproline, tryptophan, tyrosine, tyramine, and valine.
10 . The coffee replica of claim 1 , wherein the coffee replica further comprises a coating surrounding the solid substrate, and wherein the coating comprises the additive.
11 . The coffee replica of claim 10 , wherein the additive comprises a liquid additive spray-applied to the solid substrate to form the coating.
12 . The coffee replica of claim 1 , wherein one or more of: a starch, a protein, a sugar, a fat-soluble component, and a flavor have been removed or partially removed from one or more of the grape seed, chickpea, lentil, pea seed, and pea protein concentrate.
13 . The coffee replica of claim 1 , wherein the coffee replica is a coffee bean replica, and wherein the solid substrate has a shape of a coffee bean.

The coffee replica of claim 13 , wherein the coffee bean replica further comprises at least one non-volatile compound selected from the group consisting of acetovanillone, adipic acid, adenosine monophosphate (AMP), arginine, carnosine, cinnamic acid, citrulline, cytidine monophosphate (CMP), coumaric acid, cysteine, cystine, epicatechin, epicatechin gallate, gamma-aminobutyric acid (GABA), glucosamine, glutamine, guanine, hesperetin, histidine, isoleucine, kynurenic acid, leucine, lysine, mannose, methionine, methyl gallate, ornithine, pantothenic acid, pipecolinic acid, piperine, polydatin, pyridoxine, quercetin, resveratrol, rutin, sinapinic acid, sorbic acid, syringaldehyde, threonine, trans-4-hydroxyproline, tryptophan, tyramine, and tyrosine.
15 . The coffee replica of claim 13 , wherein the coffee bean replica further comprises a tableting aid comprising one or more of a starch, a sugar, and a gum.
16 . The coffee replica of claim 13 , wherein the coffee bean replica further comprises one or more of shellac, zein protein, a wax, a bulking agent, and an emulsifier.
17 . The coffee replica of claim 1 , wherein the coffee replica is a coffee ground replica, and wherein the solid substrate comprises a plurality of particles having a particle size between about 250 μm to about 1500 μm.

The coffee replica of claim 17 , wherein the coffee ground replica further comprises at least one non-volatile compound selected from the group consisting of acetovanillone, adipic acid, adenosine monophosphate (AMP), arginine, carnosine, cinnamic acid, citrulline, cytidine monophosphate (CMP), coumaric acid, cysteine, cystine, epicatechin, epicatechin gallate, gamma-aminobutyric acid (GABA), glucosamine, glutamine, guanine, hesperetin, histidine, isoleucine, kynurenic acid, leucine, lysine, mannose, methionine, methyl gallate, ornithine, pantothenic acid, pipecolinic acid, piperine, polydatin, pyridoxine, quercetin, resveratrol, rutin, sinapinic acid, sorbic acid, syringaldehyde, threonine, trans-4-hydroxyproline, tryptophan, tyramine, and tyrosine.
19 . The coffee replica of claim 17 , wherein the coffee ground replica further comprises a tableting aid comprising one or more of a starch, a sugar, and a gum.
20 . The coffee replica of claim 17 , wherein the coffee ground replica further comprises one or more of shellac, zein protein, a wax, a bulking agent, and an emulsifier.
21 . The replica of claim 1 , wherein the solid substrate comprises grape seeds, chickpeas, or a combination thereof.
22 . The replica of claim 1 , wherein the solid substrate consists of one or more of grape seeds, chickpeas, lentils, pea seeds, and pea protein concentrate.
23 . The replica of claim 1 , wherein the solid substrate consists of grape seeds, chickpeas, or a combination thereof.
24 . The replica of claim 1 , wherein the solid substrate consists of chickpeas.
25 . The replica of claim 1 , wherein the solid substrate consists of grape seeds.
