Abstract

Engineered polypeptides useful in synthesizing acyl amino acids are provided. Also provided are methods of making acyl amino acids using engineered polypeptides. In certain embodiments, an acyl amino acid produced using compositions and/or methods at the present invention comprises cocoyl glutamate.

Claims (4)

1 . A composition comprising an acyl amino acid isolated from a bacterial cell, wherein the acyl amino acid comprises a single natural proline covalently linked to a natural fatty acid, wherein the natural fatty acid is a beta-hydroxy fatty acid with a branched carbon chain.

2 . The composition of claim 1 , wherein the natural fatty acid is produced by the bacterial cell and wherein the composition is free of bacterial cell proteins.

3 . The composition of claim 1 , wherein the natural fatty acid is beta-hydroxy myristic acid.

4 . The composition of claim 1 , wherein the bacterial cell is or comprises Bacillus subtilis.
