Abstract

Dehydrated potato flakes prepared from potato slices, slivers and/or nubbins suitable for use in dough compositions used to make fabricated products. The dehydrated flakes are prepared such that the physical properties in the flake are controlled during processing. The resulting flakes can be used to prepare a more cohesive, non-adhesive, machineable dough.

Claims (62)

1. A mixture of potato flakes wherein the flakes within the mixture have

(a) from about 16% to about 27% amylose;

(b) a WAI of from about 6.7 to about 9.5 grams of water per gram of flakes; and

(c) a particle size distribution such that:

(1) from 60% to about 70% remain on a #100 U.S. screen;

(2) from 20% to about 40% remain on a #40 U.S. screen;

(3) from about 1% to about 3% remain on a #20 U.S. screen; and

(4) from 1% to about 3% remain on a #16 U.S. screen.

2. The potato flakes of claim 1 , wherein said potato flakes comprise from about 20% to about 27% amylose.

3. The potato flakes of claim 2 , wherein said potato flakes have a WAI of from about 7.7 to about 9.5 grams of water per gram of flakes.

4. The potato flakes of claim 1 , wherein said potato flakes have a WAI of from about 7.7 to about 9.5 grams of water per gram of flakes.

5. The potato flakes of claim 1 , 2 , 4 , or 3 , wherein said potato flakes are made from raw potato pieces.

6. The potato flakes of claim 1 , wherein said potato flakes comprise from about 16% to about 20% amylose.

7. The potato flakes of claim 1 , wherein said potato flakes have a WAI of from about 6.7 to about 8.3 grams of water per gram of flakes.

8. The potato flakes of claim 1 , wherein said potato flakes have a WAI of from about 6.7 to about 8.3 grams of water per gram of flakes.

9. The potato flakes of claim 1 , 6 , 7 , or 8 , wherein said potato flakes are made from pre-conditioned potato pieces.

10. A mixture of potato flakes wherein the flakes within the mixture have:

(a) from about 16% to about 27% amylose;

(b) a hot paste viscosity of from about 100 BU to about 320 BU;

(c) a cold paste viscosity of from about 100 BU to about 230 BU; and

(d) a particle size distribution such that:

(1) from 60% to about 70% remain on a #100 U.S. screen;

(2) from 20% to about 40% remain on a #40 U.S. screen;

(3) from about 1% to about 3% remain on a #20 U.S. screen; and

(4) from 1% to about 3% remain on a #16 U.S. screen.

11. The potato flakes of claim 10 , wherein said potato flakes comprise from about 20% to about 27% amylose.

12. The potato flakes of claim 11 , wherein said potato flakes have a hot paste viscosity of from about 240 BU to about 300 BU.

13. The potato flakes of claim 12 , wherein said potato flakes have a cold paste viscosity of from about 120 BU to about 220 BU.

14. The potato flakes of claim 11 , wherein said potato flakes have a cold paste viscosity of from about 120 BU to about 220 BU.

15. The potato flakes of claim 10 , wherein said potato flakes comprise from about 16% to about 20% amylose.

16. The potato flakes of claim 15 , wherein said potato flakes have a hot paste viscosity of from about 240 BU to about 300 BU.

17. The potato flakes of claim 16 , wherein said potato flakes have a cold paste viscosity of from about 120 BU to about 220 BU.

18. The potato flakes of claim 15 , wherein said potato flakes have a cold paste viscosity of from about 120 BU to about 220 BU.

19. The potato flakes of claim 10 , wherein said potato flakes have a hot paste viscosity of from about 240 BU to about 300 BU.

20. The potato flakes of claim 19 , wherein said potato flakes have a cold paste viscosity of from about 120 BU to about 220 BU.

21. The potato flakes of claim 10 , wherein said potato flakes have a cold paste viscosity of from about 120 BU to about 220 BU.

22. The potato flakes of claim 10 , wherein said potato flakes have a hot paste viscosity of from about 275 BU to about 290 BU and a cold paste viscosity of from about 150 BU to about 210 BU.

23. The potato flakes of claim 10 , wherein the difference between the HPV and the CPV of said potato flakes is less than about 150 BU.

24. The potato flakes of claim 10 , wherein the difference between the HPV and the CPV of said potato flakes is less than about 120 BU.

25. The potato flakes of claim 10 , wherein the difference between the HPV and the CPV of said potato flakes is less than about 100 BU.

26. A mixture of potato flakes wherein the flakes within the mixture have:

(a) a WAI of from about 6.7 to about 9.5 grams of water per gram of flakes.

(b) a hot paste viscosity of from about 100 BU to about 320 BU;

(c) a cold paste viscosity of from about 100 BU to about 230 BU; and

(d) a particle size distribution such that:

(1) from 60% to about 70% remain on a #100 U.S. screen;

(2) from 20% to about 40% remain on a #40 U.S. screen;

(3) from about 1% to about 3% remain on a #20 U.S. screen; and

(4) from 1% to about 3% remain on a #16 U.S. screen.

27. The potato flakes of claim 26 , wherein said potato flakes have a WAI of from about 7.7 to about 9.5 grams of water per gram of flakes.

28. The potato flakes of claim 27 , wherein said potato flakes have a hot paste viscosity of from about 240 BU to about 300 BU.

29. The potato flakes of claim 28 , wherein said potato flakes have a cold paste viscosity of from about 120 BU to about 220 BU.

30. The potato flakes of claim 26 , wherein said potato flakes have a WAI of from about 6.7 to about 8.3 grams of water per gram of flakes.

31. The potato flakes of claim 30 , wherein said potato flakes have a hot paste viscosity of from about 240 BU to about 300 BU.

32. The potato flakes of claim 31 , wherein said potato flakes have a cold paste viscosity of from about 120 BU to about 220 BU.

33. The potato flakes of claim 26 , wherein said potato flakes have a hot paste viscosity of from about 240 BU to about 300 BU.

34. The potato flakes of claim 33 , wherein said potato flakes have a cold paste viscosity of from about 120 BU to about 220 BU.

35. The potato flakes of claim 26 , wherein said potato flakes have a cold paste viscosity of from about 120 BU to about 220 BU.

36. The potato flakes of claim 26 , wherein said potato flakes have a hot paste viscosity of from about 275 BU to about 290 BU and a cold paste viscosity of from about 150 BU to about 210 BU.

37. The potato flakes of claim 26 , wherein the difference between the HPV and the CPV of said potato flakes is less than about 150 BU.

38. The potato flakes of claim 26 , wherein the difference between the HPV and the CPV of said potato flakes is less than about 120 BU.

39. The potato flakes of claim 26 , wherein the difference between the HPV and the CPV of said potato flakes is less than about 100 BU.
