Abstract

A method for tenderizing meat of a red meat slaughter animal includes separating a vertebra of the animal and applying electrical stimulation to the animal's musculature. The vertebra separating is performed prior to the onset of rigor mortis to enable stretching of muscle fibers in the carcass. The electrical stimulation is focused on a midsection of the animal.

Claims (9)

1. A method for treating a carcass of a bovine red meat slaughter animal, the method comprising:

separating a vertebra of the carcass prior to rigor mortis using:

a plate;

an operating member operably coupled to the plate; and

a drive mechanism operably coupled to the operating member for driving the operating member into a carcass to manipulate the vertebra;

electrically stimulating the musculature of the carcass; and

disinfecting the carcass.

2. The method of claim 1 wherein the act of separating is performed prior to the act of electrically stimulating.

3. The method of claim 2 wherein the act of electrically stimulating is continued for a sufficient period of time to substantially deplete the glycogen in the musculature of the carcass.
