Abstract

Processing and packaging for perishable goods, such as beef, in a conduit wherein oxygen is substantially excluded and suitable gases such as carbon dioxide are provided at a suitable pressure and in such a manner as to increase the quantity of the gases dissolved in the perishable goods to extend the shelf life of the goods and decontaminate the goods.

Claims (33)

19 . A method for grinding meat, comprising:

providing meat to a meat grinder;

contacting the meat with carbon dioxide;

providing carbon dioxide to displace atmospheric oxygen and grinding the meat in the presence of carbon dioxide such that oxygen is inhibited from contacting the freshly cut beef surfaces;

providing a vessel or enclosed conduit connected to the grinder such that the freshly ground beef is transferred into the vessel;

providing carbon dioxide in said vessel or enclosed conduit;

transferring said ground meat to said enclosed conduit or vessel so as to inhibit the newly exposed cut meat surfaces from contacting atmospheric oxygen; and

to provide ground meat excluding atmospheric oxygen.

20 . The method of claim 19 , wherein the carbon dioxide is cooled to a predetermined temperature.

21 . The method of claim 19 , wherein carbon dioxide is injected in a continuous stream at the grinding head of the meat grinder and the vessel connected thereto.

22 . The method of claim 19 , further comprising mixing the ground meat to allow the carbon dioxide to dissolve in the ground meat.

23 . The method of claim 22 , wherein carbon dioxide aids in the preservation of the ground meat during storage by later evolving from the meat and maintaining the oxygen content surrounding the meat below a predetermined level.

24 . The method of claim 19 , further comprising removing air from a package, placing said ground meat therein, and sealing the package from the exterior environment.

25 . The method of claim 24 , wherein a gas including nitrogen and/or carbon dioxide and/or carbon monoxide is provided in said vessel or enclosed conduit.

26 . The method of claim 24 , wherein the oxygen content in the vessel after displacement of the air is below 0.10%.

27 . The method of claim 24 , further comprising placing an agent in the package to maintain the level of oxygen below 0.05%.

28 . The method of claim 24 , wherein the gas is selected to suppress formation of metmyoglobin.

29 . The method of claim 24 , further comprising testing the meat for the presence of bacteria.

30 . The method of claim 29 , wherein the bacteria may be E coli bacteria.

31 . A method of extending the storage life of meat in packages, comprising:

contacting the meat with a suitable quantity of carbon dioxide;

placing the meat in a sealable package; and

removing air from the package and substituting a selected gas therefor, wherein the remaining level of oxygen in the package is selected to suppress formation of metmyoglobin to result in an extended storage life of the meat compared to the storage life of meat packaged in air.

32 . The method of claim 31 , wherein the selected gas comprises carbon dioxide or nitrogen and carbon monoxide.

33 . The method of claim 31 , further comprising placing an agent in the package or container to maintain the level of oxygen below 0.05%.

34 . The method of claim 31 , wherein the remaining level of oxygen in the package is selected to suppress oxidation of deoxymyoglobin in meat.

35 . A method for storing ground meat, comprising:

dissolving a suitable quantity of carbon dioxide in ground meat;

packaging the ground meat with carbon dioxide dissolved therein, wherein said quantity of carbon dioxide is sufficient to allow carbon dioxide to evolve from the meat.

36 . The method of claim 35 , wherein carbon dioxide evolving from said meat aids in the preservation of meat during storage in said container.

37 . The method of claim 19 , wherein said ground meat is then transferred, at a controlled and measurable rate of mass flow via an enclosed conduit which excludes air thereby substantially preventing oxygen from contacting said ground meat, into a package comprising gas barrier flexible plastics material sealed to enclose said meat and a selected gas which aids in the preservation of meat during storage.

38 . The method of claim 37 , wherein said selected gas includes carbon monoxide in a quantity of not more than 0.4% of the selected gas.
