Abstract

A food comprising a mutant gliadin protein that comprises at least one mutation in the epitope 62 PQPQLPY 68 (SEQ ID NO:6), wherein the mutation decreases the ability of the epitope to induce a T cell response, or a fragment of the mutant gliadin protein wherein the fragment is at least 15 amino acids long and comprises the mutated 62 PQPQLPY 68 (SEQ ID NO:6) is provided herein.

Claims (17)

1. A protein comprising:

a) a mutant gliadin protein with a mutation in the epitope 62 PQPQLPY 68 (SEQ ID NO:6), wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a histidine, tyrosine, tryptophan, lysine, proline, or arginine residue; or

b) a fragment of the mutant protein of a), which fragment is at least 15 amino acids long and comprises the mutated PQPQLPY sequence.

A protein comprising a mutant gliadin protein with a mutation in the epitope 62 PQPQLPY 68 (SEQ ID NO:6), wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a histidine, tyrosine, tryptophan, lysine, proline, or arginine residue.

3. The protein of claim 2 wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a histidine residue.

4. The protein of claim 2 wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a tyrosine residue.

5. The protein of claim 2 wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a tryptophan residue.

6. The protein of claim 2 wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a lysine residue.

7. The protein of claim 2 wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a proline residue.

8. The protein of claim 2 wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to an arginine residue.

9. A protein comprising a fragment of a mutant gliadin protein with a mutation in the epitope 62 PQPQLPY 68 (SEQ ID NO:6), wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a histidine, tyrosine, tryptophan, lysine, proline, or arginine residue, which fragment is at least 15 amino acids long and comprises the mutated PQPQLPY sequence.

10. The protein of claim 9 wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a histidine residue.

11. The protein of claim 9 wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a tyrosine residue.

12. The protein of claim 9 wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a tryptophan residue.

13. The protein of claim 9 wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a lysine residue.

14. The protein of claim 9 wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to a proline residue.

15. The protein of claim 9 wherein the glutamine residue at position 65 in A-gliadin, or in an equivalent position in other gliadins, is substituted to an arginine residue.
