Abstract

The use is described of a compound of formula (I) wherein R represents a C 1 -C 4 alkyl or a C 1 -C 5 acyl residue as an odorant or flavoring or as a flavor enhancer.

Claims (38)

1 . An odorant flavouring or flavour enhancer composition comprising a compound of formula I

wherein

R represents a C 1 -C 4 alkyl or a C 1 -C 5 acyl residue.

2 . A composition according to claim 1 , wherein R is selected from the group consisting of methyl, ethyl, 1-propyl, 2-propyl, 1-butyl, 2-butyl, 2-methyl-1-propyl-, 2-methyl-2-propy, formyl, acetyl, propionyl, butyryl, 2-methylpropionyl, valeryl, 2-methylbutyryl and 3-methylbutyryl.

3 . a composition according to claim 1 , wherein R is methyl.

4 . Compound of formula I

wherein

R represents a C 1 -C 4 alkyl or a C 1 -C 5 acyl residue.

5 . A process for the production, enhancement or modification of odour and/or taste properties of a basic composition, comprising:

mixing a compound according to formula I

wherein

R represents a C 1 -C 4 alkyl or a C 1 -C 5 acyl residue; and

in a sensorially active quantity with said basic composition.

6 . A flavour composition containing a sensorially active quantity of one or more different compounds of formula I

wherein

R represents a C 1 -C 4 alkyl or a C 1 -C 5 acyl residue, and

a sensorially active quantity of one or more other flavourings,

wherein

said sensorially active quantity of one or the different compounds of formula I is selected such that the sensory impression created by said sensorially active quantity of the one or more other flavourings is enhanced and/or modified and/or rounded off.

7 . A preparation consumed for nutrition or pleasure, containing

(a) a sensorially active quantity of one or more different compounds of formula I

wherein

R represents a C 1 -C 4 alkyl or a C 1 -C 5 acyl residue, or

(b) flavour composition according to claim 6 , and optionally one or more conventional basic, auxiliary or additive substances.

8 . A process for the production of a compound of formula I

wherein

R represents a C 1 -C 4 alkyl or a C 1 -C 5 acyl residue, with the following step:

reacting a compound of formula II

wherein

X represents a leaving group in a nucleophilic substitution reaction,

a) with a C 1 -C 4 alkanethiol or a C 1 -C 5 thioalkanoic acid in the presence of a base

or

b) with an alkali or alkaline earth salt of a C 1 -C 4 alkanethiol or a C 1 -C 5 thioalkanoic acid.

9 . A composition according to claim 4 , wherein R is selected from the group consisting of methyl, ethyl, 1-propyl, 2-propyl, 1-butyl, 2-butyl, 2-methyl-1-propyl-, 2-methyl-2propyl, formyl, acetyl, propionyl, butyryl, 2-methylpropionyl, valeryl, 2-methylbutyryl and 3-methylbutyryl.

10 . A composition according to claim 5 , wherein R is selected from the group consisting of methyl, ethyl, 1-propyl, 2-propyl, 1-butyl, 2-butyl, 2-methyl-1-propyl-, 2-methyl-2propyl, formyl, acetyl, propionyl, butyryl, 2-methylpropionyl, valeryl, 2-methylbutyryl and 3-methylbutyryl.

11 . A composition according to claim 6 , wherein R is selected from the group consisting of methyl, ethyl, 1-propyl, 2-propyl, 1-butyl, 2-butyl, 2-methyl-1-propyl-, 2-methyl-2propyl, formyl, acetyl, propionyl, butyryl, 2-methylpropionyl, valeryl, 2-methylbutyryl and 3-methylbutyryl.

12 . A composition according to claim 7 , wherein R is selected from the group consisting of methyl, ethyl, 1-propyl, 2-propyl, 1-butyl, 2-butyl, 2-methyl-1-propyl-, 2-methyl-2propyl, formyl, acetyl, propionyl, butyryl, 2-methylpropionyl, valeryl, 2-methylbutyryl and 3-methylbutyryl.

13 . A composition according to claim 8 , wherein R is selected from the group consisting of methyl, ethyl, 1-propyl, 2-propyl, 1-butyl, 2-butyl, 2-methyl-1-propyl-, 2-methyl-2propyl, formyl, acetyl, propionyl, butyryl, 2-methylpropionyl, valeryl, 2-methylbutyryl and 3-methylbutyryl.
