Abstract

Provided herein are compositions and methods for preparing foods and beverages that contain additives, such as nutraceuticals, pharmaceuticals, and supplements, such as essential fatty acids, including omega-3 fatty acids, omega-6 fatty acids, conjugated fatty acids, and other fatty acids; phytochemicals, including phytosterols; other oils; and coenzymes, including Coenzyme Q10, and other oil-based additives.

Claims (41)

1. A method for preparing a liquid nanoemulsion concentrate, comprising:

(a) generating an oil phase by:

(i) mixing one or more oil phase ingredients in a first vessel, the oil phase ingredients comprising a non-polar ingredient in an amount between about 5% and about 10%, by weight, of the concentrate and tocopherol polyethylene glycol succinate (TPGS) in an amount between about 16% and about 30%, by weight, of the concentrate;

(ii) heating the one or more oil phase ingredients;

(b) generating a water phase by:

(i) mixing one or more water phase ingredients in a second vessel, wherein the water phase ingredients comprise a polar solvent in an amount between about 60% and about 79% by weight of the concentrate, and

(ii) heating the one or more water phase ingredients;

(c) emulsifying the oil phase and the water phase;

thereby generating the liquid nanoemulsion concentrate; wherein the resulting nanoemulsion concentrate, comprises:

tocopherol polyethylene glycol succinate (TPGS) in an amount between about 16% and about 30%, by weight, of the concentrate;

a polar solvent in an amount between about 60% and about 79%, by weight, of the concentrate; and

a non-polar ingredient selected from among any one or more of polyunsaturated fatty acids, Coenzyme Q10 compounds and phytosterols present in an amount between about 5% and about 10%, by weight, of the concentrate.

2. A method of providing an oil-based additive in a beverage, comprising adding the liquid nanoemulsion concentrate prepared by the method of claim 1 to an aqueous beverage in an amount, whereby the aqueous medium contains an effective amount of the non-polar ingredient.

3. The method of claim 2 , wherein the beverage is water, a flavored water, soda, milk, juice, coffee, tea, an energy drink, a vitamin-fortified beverage or a sports or nutrition beverage.

4. The method of claim 1 , wherein the TPGS is TPGS-1000.

5. The method of claim 1 , wherein the non-polar ingredient is selected from among any one or more of polyunsaturated fatty acids, Coenzyme Q10 compounds and phytosterols.

6. The method of claim 1 , wherein the polar solvent is between about 60% and about 76%, inclusive, by weight of the concentrate.

7. The method of claim 1 , wherein the non-polar ingredient contains at least one polyunsaturated fatty acid selected from among omega-3 fatty acids, omega-6 fatty acids and conjugated fatty acids.

8. The method of claim 1 , wherein the polar solvent is water.

9. A method for preparing a liquid nanoemulsion concentrate, comprising:

(a) generating an oil phase by:

(i) mixing one or more first oil phase ingredients in a first vessel and heating the first oil phase ingredients at least until the first oil phase ingredients dissolve,

(ii) adding one or more additional oil phase ingredients to the first vessel, and

(iii) mixing and heating the first and the additional oil phase ingredients, wherein the oil phase ingredients comprise:

tocopherol polyethylene glycol succinate (TPGS) in an amount between about 16% and about 30%, by weight, of the concentrate; and

a non-polar ingredient in an amount between about 5% and about 10%, by weight, of the concentrate;

(b) generating a water phase by:

(i) mixing one or more water phase ingredients in a second vessel, wherein the water phase ingredients comprise a polar solvent in an amount between about 60% and about 79% by weight of the concentrate, and

(ii) heating the one or more water phase ingredients; and

(c) emulsifying the oil phase and the water phase, thereby generating a liquid nanoemulsion concentrate.

10. The method of claim 9 , wherein the TPGS is TPGS-1000.

11. The method of claim 9 , wherein the non-polar ingredient is selected from among any one or more of polyunsaturated fatty acids, Coenzyme Q10 compounds and phytosterols.

12. The method of claim 9 , wherein the resulting nanoemulsion concentrate, comprises:

TPGS in an amount between 16% and 30%, by weight, of the concentrate,

a polar solvent in an amount between about 60% and 79% by weight, of the concentrate; and

a non-polar active ingredient selected from among any one or more of polyunsaturated fatty acids, Coenzyme Q10 compounds and phytosterols, wherein the non-polar active ingredient is present in an amount between 5% or about 5% and 10% or about 10%, by weight, of the concentrate.

13. The method of claim 9 , wherein the polar solvent is between about 60% and about 76%, inclusive, by weight of the concentrate.

14. The method of claim 9 , wherein the non-polar ingredient contains at least one polyunsaturated fatty acid selected from among omega-3 fatty acids, omega-6 fatty acids and conjugated fatty acids.

15. The method of claim 9 , wherein the polar solvent is water.

16. A method of providing an oil-based additive in a beverage, comprising adding the liquid nanoemulsion concentrate of claim 9 to an aqueous beverage in an amount, whereby the aqueous medium contains an effective amount of the non-polar ingredient.

17. The method of claim 16 , wherein the beverage is water, a flavored water, soda, milk, juice, coffee, tea, an energy drink, a vitamin-fortified beverage or a sports or nutrition beverage.
