Abstract

A composition comprises an ion-exchanged carrageenan. The carrageenan may be a traditionally extracted or neutrally extracted iota or kappa carrageenan. The ion-exchanged carrageenan has reduced gelling cation contents, reduced gelling temperature, and reduced melting temperature, as compared to its non-ion-exchanged counterpart. The ion-exchanged carrageenan may be mixed with another carrageenan to form a carrageenan product having a unique gelling temperature and melting temperature. Also disclosed is a process for making an ion-exchanged carrageenan composition.

Claims (38)

1. A process for making an iota carrageenan product comprising the steps of

(a) providing a first iota carrageenan extract having a first gelling temperature and a first melting temperature;

(b) providing an ion-exchanged iota carrageenan extract having a second gelling temperature that is different from the first gelling temperature, and having a second melting temperature that is different from the first melting temperature; and

(c) mixing the iota carrageenan extract and the ion-exchanged iota carrageenan extract to form the iota carrageenan product having a third gelling temperature that is between the first and second gelling temperatures and a third melting temperature that is between the first and second melting temperatures.

The process according to claim 1 , wherein the step of providing an ion-exchanged iota carrageenan extract comprises (a) providing a second iota carrageenan extract; and (b) contacting the second iota carrageenan extract with an acidic cationic ion exchange material and reducing the cation content of the second iota carrageenan extract to produce the ion-exchanged iota carrageenan extract.

3. The process according to claim 2 , wherein the step of contacting is at a temperature of about 70° C.

4. The process according to claim 2 , wherein the step of contacting is performed for a period of time in the range of about 5 minutes to about 1000 minutes.

5. The process according to claim 1 , wherein the third gelling temperature is about 18° C. to about 40° C. and the third melting temperature is about 27° C. to about 47° C.

6. The process according to claim 5 , wherein the ion-exchanged iota carrageenan extract is a traditionally extracted iota carrageenan and the iota carrageenan product comprises:

a potassium content of about 30 mg/g carrageenan;

a calcium content of about 10 mg/g carrageenan; and

a magnesium content of less than about 2.5 mg/g carrageenan.

7. The process according to claim 6 , wherein the iota carrageenan product comprises a sodium content of about 45 mg/g carrageenan.

8. The process according to claim 1 , wherein the third gelling temperature is about 5° C. to about 25° C. and the third melting temperature is about 17° C. to about 38° C.

9. The process according to claim 8 , wherein the ion-exchanged iota carrageenan extract is a neutrally extracted iota carrageenan and the iota carrageenan product comprises:

a potassium content of about 30 mg/g to about 35 mg/g carrageenan;

a calcium content of about 5 mg/g carrageenan; and

a magnesium content of about 5 mg/g carrageenan.

10. The process according to claim 9 , wherein the iota carrageenan product comprises a sodium content of about 45 mg/g carrageenan.

11. A process for making a kappa carrageenan product comprising the steps of

(a) providing a first kappa carrageenan extract having a first gelling temperature and a first melting temperature;

(b) providing an ion-exchanged kappa carrageenan extract having a second gelling temperature that is different from the first gelling temperature, and having a second melting temperature that is different from the first melting temperature; and

(c) mixing the kappa carrageenan extract and the ion-exchanged kappa carrageenan extract to form the kappa carrageenan product having a third gelling temperature that is between the first and second gelling temperatures and a third melting temperature that is between the first and second melting temperatures.

The process according to claim 11 , wherein the step of providing an ion-exchanged kappa carrageenan extract comprises (a) providing a second kappa carrageenan extract; and (b) contacting the second kappa carrageenan extract with an acidic cationic ion exchange material and reducing the cation content of the second kappa carrageenan extract to produce the ion-exchanged kappa carrageenan extract.

13. The process according to claim 12 , wherein the step of contacting is at a temperature of about 70° C.

14. The process according to claim 12 , wherein the step of contacting is performed for a period of time in the range of about 5 minutes to about 1000 minutes.

15. The process according to claim 11 , wherein the third gelling temperature is about 10° C. to about 37° C. and the third melting temperature is about 23° C. to about 63° C.

16. The process according to claim 15 , wherein the ion-exchanged kappa carrageenan extract is a traditionally extracted kappa carrageenan and the kappa carrageenan product comprises:

a potassium content of about 30 mg/g carrageenan;

a calcium content of about 10 mg/g carrageenan; and

a magnesium content of less than about 0.25 mg/g carrageenan.

17. The process according to claim 16 , wherein the kappa carrageenan product comprises a sodium content of about 30 mg/g carrageenan.

18. The process according to claim 11 , wherein the third gelling temperature is about 10° C. to about 38° C. and the third melting temperature is about 23° C. to about 53° C.

19. The process according to claim 18 , wherein the ion-exchanged kappa carrageenan extract is a neutrally extracted kappa carrageenan and the kappa carrageenan product comprises:

a potassium content of about 35 mg/g to about 30 mg/g carrageenan;

a calcium content of less than about 5 mg/g carrageenan; and

a magnesium content of less than about 5 mg/g carrageenan.

20. The process according to claim 19 , wherein the kappa carrageenan product comprises a sodium content of about 25 mg/g to about 30 mg/g carrageenan.
