Abstract

A presoak cleaning compound and cleaning process developed for compatible application to aluminum and common cooking surfaces including stainless steel, steel, ferrous, plastic or coated cooking surfaces including baking pans and sheet pans, or commonly used substrate materials for food preparation and cooking surfaces of food stuffs for the removal of food soils, baked on food soils, and soils resulting from the preparation and cooking of food stuffs without discoloration, tarnishing, or pitting of the surface.

Claims (28)

1 . A presoak cleaning composition which avoids discoloration, tarnishing, or pitting of aluminum surfaces in pre-soak operations comprises one alkali metal hydroxide or a mixture of alkali metal hydroxides and one alkali silicate or a mixture of alkali silicates in the ratio of about 1:1 to 1:50 expressed as normality of hydroxide to normality of silicate, and wherein alkali silicate is present in an amount up to about 40% by weight of the composition.

A composition according to claim 1 wherein the alkali metal hydroxide is sodium or potassium hydroxide and the alkali silicate is potassium silicate, and wherein sodium hydroxide to potassium silicate is in the ratio of 1:1.3 to 1:1.7 expressed as normality of hydroxide to normality of silicate, and wherein potassium silicate is present in an amount of 2% to 10% by weight of the composition.

A composition according to claim 2 , having an ammoniated agent, wherein the ammoniated agent is from the group consisting morpholine, ethanol and propanol mono, di, and tri amines and combinations thereof wherein the ammoniated solvent agent is present in an amount of 0.1% to 5% by weight of the composition.

4 . A composition according to claim 3 , having a glycol ether or a mixture of glycol ethers, wherein amount of glycol ether or glycol ether mixtures is in a range of 0.5% to 50% by weight of the composition.

A composition according to claim 4 , having a surfactant or a mixture of surfactants, wherein the surfactant or mixture of surfactants is in an amount of 0.5% to 50% by weight of the composition and wherein the surfactant and surfactants in the mixture include anionic, nonionic, cationic and/or amphoteric surfactant.

6 . A composition according to claim 1 wherein the alkali metal hydroxide is sodium or potassium hydroxide and the alkali silicate is potassium silicate and wherein potassium silicate is present in an amount of 2% to 10% by weight of the composition.

A composition according to claim 1 , having an ammoniated agent, wherein the ammoniated solvent agent is from the group consisting of morpholine, ethanol and propanol mono, di, and tri amines and combinations thereof and wherein the ammoniated solvent agent is present in an amount of 0.1% to 5% by weight of the composition.

8 . A composition according to claim 7 , having a glycol ether or a mixture of glycol ethers, wherein amount of glycol ether or glycol ether mixtures is in a range of 0.5% to 50% by weight of the composition.

9 . A composition according to claim 1 , having a glycol ether or a mixture of glycol ethers, wherein amount of glycol ether or glycol ether mixtures is in a range of 0.5% to 50% by weight of the composition.

A composition according to claim 1 , having a surfactant or a mixture of surfactants, wherein the surfactant or mixture of surfactants is in an amount of 0.5% to 50% by weight of the composition and wherein the surfactant and surfactants in the mixture include one or more of anionic, nonionic, cationic and amphoteric surfactants.

A composition according to claim 6 , having a surfactant or a mixture of surfactants, wherein the surfactant or mixture of surfactants is in an amount of 0.5% to 50% by weight of the composition and wherein the surfactant and surfactants in the mixture include one or more of anionic, nonionic, cationic and amphoteric surfactants.

A composition according to claim 2 , having a surfactant or a mixture of surfactants, wherein the surfactant or mixture of surfactants is in an amount of 0.5% to 50% by weight of the composition and wherein the surfactant and surfactants in the mixture include one or more of anionic, nonionic, cationic and amphoteric surfactants.

13 . A composition according to claim 1 further including water.

14 . A composition according to claim 1 having a pH in a range of about 11.0 to 13.5.

15 . A composition according to claim 2 having a pH in a range of about 11.0 to 13.5,

16 . A composition according to claim 3 having a pH in a range of about 11.0 to 13.5.

A process for cleaning a cooking or food preparation surface comprising selecting the composition according to claim 1 , diluting the amount of the alkali silicate to 0.5% to 10% by weight of the diluted composition, applying the diluted composition to the surface and rinsing the surface without discoloring or tarnishing the surface.

18 . The process of claim 17 , wherein the surface includes a material selected from the group consisting of aluminum, steel, iron, silicone and plastic.

19 . The process of claim 18 , wherein the surface includes aluminum.

20 . A process for cleaning a cooking or food preparation surface comprising selecting the composition according to claim 1 , diluting the amount of the alkali silicate to 2% to 10% by weight of the diluted composition, applying the diluted composition to the surface and rinsing the surface without discoloring or tarnishing the surface.

21 . The process of claim 20 , wherein the surface includes a material selected from the group consisting of aluminum, steel, iron, silicone and plastic.

22 . The process of claim 21 , wherein the surface includes aluminum.
