Abstract

A combined fermentor and press assembly. The combined fermentor and press assembly includes a pot, container or bag having a preestablished volume “V” defined therein. A must and a future pomace being positioned in said preestablished volume “V”. A drain space “DS” defined within the preestablished volume “V” and a drain system, consisting of tubes and valves connected to a receptacle and a pump drawing a liquid from the must and the future pomace.

Claims (18)

1. A method of separating a liquid from a must and a future pomace, said method of separating comprising the steps of:

positioning a spacer within a pot, said pot having an inlet and a preestablished volume and said spacer within said pot forming a drain space within said preestablished volume;

positioning a false bottom within said pot, said false bottom being in contacting relationship with said spacer and said false bottom being capable of permitting a flow of liquid therethrough;

positioning said must and said future pomace within said pot, said must and said future pomace being in contacting relationship with said false bottom;

allowing said must and said future pomace to ferment within at least a portion of said preestablished volume of said pot;

positioning a sealing member within said pot in a contacting relationship with said must and said future pomace, said sealing member having a first sealing portion and a support and guiding member having a plurality of vertical plates each having an adjustable slide member, at least one slide member being joined to a slide end, wherein said first sealing portion is sealingly connecting with an inside of said pot;

connecting an inlet end of a first tube to said drain space;

connecting an outlet end of said first tube to a receptacle, said receptacle having a volume retention portion and an inlet and outlet end, and said outlet end of said first tube being positioned within said volume retention portion;

positioning a first end of a second tube within said receptacle, said first end of said second tube being spaced from said inlet and outlet end at a preestablished distance;

attaching a second end of said second tube to a pump;

actuating said pump creating at least a partial vacuum within said drain space;

drawing said sealing member into a further contacting relationship via said partial vacuum with said must and said future pomace;

drawing said liquid from said future pomace and dispensing said liquid via said partial vacuum into said volume retention portion of said receptacle.

2. The method of separating a liquid from a must and a future pomace of claim 1 wherein said step of attaching a second end of said second tube to a pump includes said pump being a positive displacement pump.

3. The method of separating a liquid from a must and a future pomace of claim 2 wherein a sediment filter is installed prior to said positive displacement pump.

4. The method of separating a liquid from a must and a future pomace of claim 1 wherein after said step of positioning a sealing member in said pot further includes adjusting the plurality of adjustable slide members from a non-contacting relationship with said inside of said pot into a contacting relationship with said inside of said pot to maintain the first sealing portion in a sealing relationship within the pot.

5. The method of separating a liquid from a must and a future pomace of claim 1 wherein said step of positioning a sealing member in said pot includes grasping a handle portion to position said sealing member in said pot.

6. The method of separating a liquid from a must and a future pomace of claim 1 wherein said step of positioning a sealing member in said pot includes adding a lubricant to said sealing member.
