19 . A method of binding a collection of matter, comprising:

preparing a curable aqueous binder solution comprising an amine reactant, a carbohydrate reactant and a hydroxy-monocarboxylic acid, and

disposing the aqueous solution onto a collection of matter.

20 . The method of claim 19 , wherein the collection of matter comprises fibers selected from the group consisting of mineral fibers, aramid fibers, ceramic fibers, metal fibers, carbon fibers, polyimide fibers, polyester fibers, rayon fibers, glass fibers, and cellulosic fibers.

21 . The method of claim 19 , wherein the aqueous binder solution comprises an ammonium salt of the hydroxy-monocarboxylic acid.

22 . The method of claim 19 , wherein the amine reactant is an ammonium salt of a hydroxy-monocarboxylic acid.

23 . The method of claim 19 , wherein the collection of matter consists essentially of glass fibers present in the range from about 80% to about 99% by weight.

24 . The method of claim 19 , wherein, the carbohydrate reactant is a reducing sugar, or a carbohydrate reactant that yields one or more reducing sugars in situ under thermal curing conditions.

25 . The method of claim 19 , wherein the carbohydrate reactant is a monosaccharide in its aldose or ketose form.

26 . The method of claim 25 , wherein the monosaccharide is selected from the group consisting of dextrose, fructose, xylose, dihydroxyacetone, and mixtures thereof.

The method of claim 19 , wherein the hydroxy-monocarboxylic acid is selected from the group consisting of an unsaturated aliphatic hydroxy-monocarboxylic acid, a saturated aliphatic hydroxy-monocarboxylic acid, an aromatic hydroxy-monocarboxylic acid, an unsaturated cyclic hydroxy-monocarboxylic acid, a saturated cyclic hydroxy-monocarboxylic acid, a monohydroxy-monocarboxylic acid, anhydrides thereof, and mixtures thereof.

28 . The method of claim 19 , wherein the hydroxy-monocarboxylic acid is selected from the group consisting of glycolic acid, gluconic acid, glyceric acid, and mixtures thereof.

29 . The method of claim 19 , wherein the binder solution has a pH in the range from 7 to 10.

30 . The method of claim 19 , wherein the aqueous binder is formaldehyde-free.

The method of claim 19 , further comprising a component selected from the group consisting of trimethylolpropane, glycerol, pentaerythritol, sorbitol, 1,5-pentanediol, 1,6-hexanediol, polyTHF650, polyTHF250, textrion whey, polyvinyl alcohol, partially hydrolyzed polyvinyl acetate, fully hydrolyzed polyvinyl acetate, and mixtures thereof.

32 . The method of claim 19 , further comprising:

volatilizing the water to form a dehydrated reactive mixture disposed upon the collection of matter, and

curing the dehydrated reactive mixture.

33 . The method of claim 19 , further comprising:

volatilizing water from the uncured binder composition; and

packaging the collection of matter and uncured binder composition.

34 . A collection of matter held together with a binder, in which the binder comprises the reaction product of curing a curable aqueous binder solution comprising an amine reactant, a carbohydrate reactant and a hydroxy-monocarboxylic acid.

35 . The collection of matter of claim 34 , wherein the collection of matter comprises fibers selected from the group consisting of mineral fibers, aramid fibers, ceramic fibers, metal fibers, carbon fibers, polyimide fibers, polyester fibers, rayon fibers, glass fibers, and cellulosic fibers.

36 . The collection of matter of claim 34 , wherein the collection of matter consists essentially of glass fibers present in the range from about 80% to about 99% by weight.

37 . The collection of matter of claim 34 , wherein the amine reactant is an ammonium salt of a hydroxy-monocarboxylic acid.

38 . The collection of matter of claim 34 , wherein the carbohydrate reactant is a reducing sugar, or a carbohydrate reactant that yields one or more reducing sugars in situ under thermal curing conditions.

39 . The collection of matter of claim 38 , wherein the carbohydrate reactant is selected from the group consisting of dextrose, fructose, xylose, dihydroxyacetone, and mixtures thereof.

40 . The collection of matter of claim 34 , wherein the hydroxy-monocarboxylic acid is selected from the group consisting of glycolic acid, gluconic acid, glyceric acid, and mixtures thereof.
