Abstract

One embodiment of the present invention is a nested fermentation method for making a beverage, such as an alcoholic or non-alcoholic beer, a wine, or the like, the method comprising the steps of: (1) performing a first fermentation process on first fermentation ingredients to form a first solution; (2) removing a first collection of alcohol, aromatics, and water from the first solution to generate an intermediate solution; (3) adding additional fermentation ingredients to the intermediate solution; (4) removing additional alcohol, aromatics, and water from the intermediate solution after fermentation of the additional fermentation ingredients; (5) repeating steps (3) and (4) as necessary to create a concentrated solution; and (6) adding aromatics and/or alcohol to the concentrated solution.

Claims (38)

1. A method for making a concentrated solution that can be used to generate a beverage, the method comprising the steps of:

(1) performing a first fermentation process on first fermentation ingredients to form a first solution;

(2) removing a first collection of alcohol, aromatics, and water from the first solution to generate an intermediate solution;

(3) adding additional fermentation ingredients to the intermediate solution;

(4) performing fermentation of the additional fermentation ingredients in the intermediate solution;

(5) removing additional alcohol, aromatics, and water from the intermediate solution after fermentation of the additional fermentation ingredients;

(6) repeating steps (3) through (5) as necessary to create a concentrated solution; and

(7) adding aromatics and/or alcohol to the concentrated solution.

2. The method of claim 1 , wherein removing the first collection of alcohol, aromatics, and water includes using a reverse osmosis process.

3. The method of claim 1 , wherein adding aromatics and/or alcohol to the concentrated solution comprises adding aromatics to form a non-alcoholic concentrated solution.

4. The method of claim 1 , wherein adding aromatics and/or alcohol to the concentrated solution comprises adding aromatics and/or alcohol from the first collection of alcohol, aromatics, and water.

5. The method of claim 1 , wherein adding aromatics and/or alcohol to the concentrated solution comprises adding aromatics and/or alcohol from the additional alcohol, aromatics, and water.

6. The method of claim 1 , wherein the first fermentation ingredients includes a first wort.

7. The method of claim 1 , wherein removing the first collection of alcohol, aromatics, and water comprises removing the alcohol, aromatics, and water in separate streams.

8. The method of claim 1 , further comprising adding flavor components to the concentrated solution.

9. A method for making a beverage, the method comprising:

performing a first fermentation step using a first set of fermentation ingredients to create a first fermented solution;

removing a first collection of alcohol, aromatics, and water from the first fermented solution to create a first intermediate solution;

adding a second set of fermentation ingredients to the first intermediate solution;

performing a second fermentation step using the second set of fermentation ingredients in the first intermediate solution to create a second fermented solution;

creating a concentrated beverage, wherein creating the concentrated beverage comprises using the second fermented solution and at least a portion of a previous collection of alcohol and aromatics.

10. The method of claim 9 , wherein creating the concentrated beverage comprises creating a non-alcoholic concentrated beverage, wherein creating the non-alcoholic beverage comprises:

removing alcohol from the second fermented solution to create a second intermediate solution, wherein the second intermediate solution has sufficiently low alcoholic content to be considered non-alcoholic; and

creating the non-alcoholic beverage by combining the second intermediate solution with aromatics.

11. The method of claim 9 , wherein creating the concentrated beverage comprises creating a concentrated alcoholic beverage, wherein creating the alcoholic beverage comprises:

removing water, as necessary, from the second fermented solution to create an intermediate concentrated solution

combining the intermediate concentrated solution with at least a portion of the previous collection of alcohol and aromatics.

12. The method of claim 9 , wherein the previous collection of alcohol and aromatics comprises the first collection of alcohol, aromatics, and water.

13. The method of claim 9 , wherein removing the first collection of alcohol, aromatics, and water includes using a reverse osmosis process.

14. The method of claim 9 , wherein creating the concentrated beverage further comprises adding flavor components.

15. A method for nested fermentation, the method comprising:

(a) fermenting a first set of fermentation ingredients in a solution in a fermentation tank;

(b) removing alcohol, aromatics, and water from the solution in the fermentation tank;

(c) adding additional fermentation ingredients to the solution in the fermentation tank; and

(d) fermenting the additional fermentation ingredients in the solution; and

(e) performing steps (b), (c), and (d) one or more times to obtain a final fermented solution.

16. The method of claim 15 , wherein removing alcohol, aromatics, and water comprises removing the alcohol, the aromatics, and the water in separate streams.

17. The method of claim 15 , wherein removing alcohol, aromatics, and water comprises using reverse osmosis.
