COLD BREW COFFEE BEVERAGE AND METHOD OF MAKING THE SAME
Disclosed are processes for making cold brew beverage compositions including concentrates and apparatus for preparing cold brew beverage compositions. The disclosed processes and apparatus allow for efficient, rapid, industrial scale production of cold brew beverage compositions having improved total solid content, improved flavor stability, longer shelf-life, and adaptability to use in small volume containers.

51 . A liquid coffee concentrate product, wherein the product is aseptically contained in a container having a volume not greater than 100 ml, and has a Brix level greater than 5.

53 . The liquid coffee concentrate product of claim 51 , wherein the pH of the coffee concentrate product does not drop below 5.5 and is shelf-stable for a period of about 6 to about 12 months.

77 . The liquid coffee concentrate product of claim 51 , wherein the product has a Brix level greater than 11.

79 . The liquid coffee concentrate product of claim 51 , wherein the product has a Brix level of about 10 to about 15.

82 . The liquid coffee concentrate product of claim 81 , wherein the pH does not drop below 5.0 during a shelf life of about 6 to about 12 months.
83 . The liquid coffee concentrate product of claim 51 , wherein the container is a cartridge.
84 . The liquid coffee concentrate product of claim 51 , wherein the container is constructed from material that comprises recyclable plastic or recyclable aluminum.
85 . The liquid coffee concentrate product of claim 51 , wherein the container is adapted to be used with a single serve beverage maker.
86 . The liquid coffee concentrate product of claim 51 , wherein the container has a lid or cover that is adapted to be peeled off or punctured.
