PLANT-BASED EGG SUBSTITUTE AND METHOD OF MANUFACTURE
Disclosed herein are non-egg compositions that can be used as egg substitutes. The disclosure is directed to egg substitutes and methods of manufacturing the same, and compositions comprising the egg substitutes, including edible compositions such as baked goods and edible emulsions.

58 . An eggless emulsion composition, said composition comprising:
(i) pea flour, and
(ii) a modified starch.
59 . The composition of claim 58 , wherein the pea flour is yellow pea flour.
60 . The composition of claim 58 , wherein the ratio of pea flour to modified start is from about 7:3 to about 3:7.
61 . The composition of claim 60 , wherein the ratio of pea flour to modified start is from about 6:4 to about 4:6.
62 . The composition of claim 61 , wherein the ratio is about 1:1.
63 . The composition of claim 58 , wherein the emulsifying properties of the composition are about 90% to about 110% of the emulsifying properties of an egg.
64 . The composition of claim 58 , wherein the pea flour has been pre-hydrated by incubating the flour with water for at least 24 hours.
65 . The composition of claim 58 , wherein said modified starch is derived from waxy maize.
66 . The composition of claim 58 , wherein the composition further comprises one or more components selected from the group consisting of guar gum, xanthan gum, carboxymethylcellulose, and mixtures thereof.
67 . The composition of claim 58 , wherein the composition is a mayonnaise.
68 . The composition of claim 58 , wherein the composition is a dressing.
