Abstract

A draught beverage 170 which may be alcoholic or non-alcoholic, for example a lager or cider in an open-topped drinking vessel or glass 172 . The beverage comprises a water content and dissolved gas content. The draught beverage is dispensed from a font at a cooled temperature below the freezing point of water at ambient atmospheric pressure. The dispense temperature may be in the range of −1° C. to −12° C. The beverage in the glass may or may not be subjected to external excitement energy, for example ultra-sound, to encourage formation of nucleation sites in the beverage. Either way dissolved gas bubbles out of the beverage causing occurrence of nucleation sites at which ice 188 A, 188 B from the water content forms. At least in part the ice has a slushy character. A head 174 also forms on the dispensed draught beverage and below the head the ice 188 A, 188 B locates and develops downwards into the beverage.

Claims (15)

1. A method of dispensing a draught alcoholic beverage into an open-topped vessel, said beverage comprising a water content and a dissolved gas content, said method comprising cooling the beverage to a temperature below the freezing point of water at ambient atmospheric pressure, delivering the cooled beverage into said vessel, subjecting said cooled beverage to ultrasound signals forming a head of foam on the beverage and forming a plurality of separate and individual ice crystals in said vessel from a portion, but not all, of said water content of said beverage, wherein said ice crystals are in direct contact with said head of foam and extend downward away from the head, and are provided in the region of the head.

2. The method according to claim 1 , wherein said alcoholic beverage is selected from the group consisting of beer, lager and cider.

3. The method according to claim 1 , wherein the plurality of ice crystals comprises ice flakes and/or powdery ice.

4. The method according to claim 3 , wherein the plurality of ice crystals is ice flakes and said ice flakes have a length of about 1-4 mm.

5. The method according to claim 1 , wherein said plurality of ice crystals forms a slush.

6. The method according to claim 1 , wherein said plurality of ice crystals forms a layer extending substantially across an open-top of said drinking vessel.

7. The method according to claim 6 , wherein the alcohol content is in the range of about 2.5% abv to about 7% abv.

8. The method according to claim 7 , wherein said alcohol content is in the range of about 3% abv to about 6% abv.

9. The method according to claim 1 , wherein said beverage is a beer and is dispensed at a temperature in a range of about −12° C. to about −1° C.

10. The method according to claim 9 , wherein said beverage is dispensed at a temperature in a range of about −6° C. to about −4° C.

11. The method according to claim 10 , wherein said beverage has an alcohol content of about 4.5% abv and is dispensed at a temperature of about −5° C.

12. The method according to claim 1 , further comprising the step of controlling the temperature of said beverage prior to dispensing.

13. The method according to claim 1 , further comprising the step of recirculating said beverage within means for dispensing prior to dispensing said beverage.

14. The method according to claim 1 , further comprising the step of creating nucleation sites for the formation of said ice crystals within said beverage.

15. The method of claim 14 , wherein said step of creating nucleation sites occurs by the step of applying ultrasound signals to said beverage.
