Abstract

A system and method for making processed meat products without the need for a vacuum system is disclosed. Meats and other meat product constituents are forced into a mixer having rotating elements for directing the constituents through a housing. The system limits the amount of air that is in contact with the constituents while resident within the housing, and provides high shear force to reduce the necessary mixing time.

Claims (18)

1. An apparatus capable of mixing constituents of a meat product to form a stable meat mixture without introducing air into the batter, the apparatus comprising:

a mixer having a mixer housing;

a plurality of mixing elements located within the mixer housing;

an input end of the mixer configured to receive meat product constituents wherein the meat product constituents include at least a meat stream with meat pieces and an additive stream including a salt solution;

a first input assembly having a first feed line, a content analyzer on the first feed line, and a pump or valve downstream of the analyzer on the feed line, the first input assembly being configured to deliver the meat stream into the input end of the mixer;

a second input assembly having a second feed line and a pump or valve on the second feed line, the second input assembly being configured to deliver the salt solution into the input end of the mixer;

an output end of the mixer configured to discharge a stable meat mixture;

a processing region of the mixer between the input end and the output end configured to process the meat product constituents by diffusing the salt solution into the meat pieces before the stable meat mixture is discharged at the output end, wherein the meat product constituents are processed for a time period insufficient to allow air to be mixed into the stable meat mixture; and

a control system that utilizes the content analyzer on the first feed line to determine at least one input compositional characteristic of the meat stream upstream of the associated valve or pump, the control system being configured to complete the analysis before the meat stream reaches the associated valve or pump and regulate the flow rates of the constituent streams by adjusting the valves or pumps such that the constituent streams flow into the input end of the mixer in a predetermined ratio, wherein the constituents of the meat product flowing into the input end of the mixer are substantially devoid of air, the control system being configured to:

manipulate the pump or valve of the first and second input assemblies to direct the meat stream and the salt solution into the mixer;

maintain at least one output compositional characteristic of the stable meat mixture within a predetermined range from at least one target value by varying one or more flow rates of the meat stream and the salt solution in response to determining the at least one input compositional characteristic of the meat stream upstream of the associated valve or pump;

determine whether to vary one or more flow rates of the meat stream and the salt solution before the analyzed meat stream reaches the associated valve or pump.

2. The apparatus of claim 1 further including a pair of rotating shafts, wherein the mixing elements are positioned on the rotating shafts.

3. The apparatus of claim 2 wherein the rotating shafts and mixing elements provide force to direct the constituents through the mixer housing.

4. The apparatus of claim 1 wherein the first feed line and the second feed line are under pressure.

5. The apparatus of claim 4 wherein both of the first and second feed lines have pumps for forcing the constituent therethrough.

6. The apparatus of claim 1 further including an input hopper for forcing constituents into the mixer housing.

7. The apparatus of claim 1 wherein the apparatus operates at a pressure of at least atmospheric pressure.
