Abstract

Described are dough compositions and methods of making dough compositions, the dough compositions being chemically leavened and being prepared from ingredients that include a low temperature inactive yeast and a yeast inhibitor; the methods include inactivating the low temperature inactive yeast to inhibit the metabolic activity of the yeast as desired; the compositions and methods can be used, e.g., to prepare refrigerated dough products.

Claims (45)

1. A chemically leavened refrigerated, packaged, refrigeration-stable dough composition prepared from ingredients comprising

water,

flour,

basic chemical leavening agent,

acidic chemical leavening agent,

from 0.0075 to 1.5 weight percent low temperature inactive yeast, based on the total weight dough composition, and

sorbate yeast activity inhibitor in an amount to inactivate the low temperature inactive yeast at refrigerated temperature,

wherein

the dough is partially proofed within the package to seal the package from inside,

the refrigeration-stable packaged dough composition can be stored at refrigerated conditions for a time period of at least 6 weeks at a temperature of 45 degrees Fahrenheit while the yeast remain inactive but substantially viable, without the package suffering damage due to expansion of the dough within the package.

2. The composition of claim 1 comprising from 0.025 to 0.2 weight percent sorbate salt, based on the total weight dough composition.

3. The composition of claim 1 , the ingredients comprising

from 10 to 32 weight percent water,

from 0.025 to 1.5 weight percent low temperature inactive yeast,

from 0.5 to 5 weight percent sugar,

from 40 to 60 weight percent flour,

from 0.5 to 1.5 weight percent basic chemical leavening agent,

from 0.5 to 3.0 weight percent acidic chemical leavening agent, and

from 0.025 to 0.2 weight percent sorbate salt,

based on total weight dough composition.

4. The product of claim 1 wherein the package is a can, a pouch, or a chub.

5. The product of claim 4 wherein the package is non-vented.

6. The product of claim 1 wherein the dough has a raw specific volume in a range from about 1.1 to about 1.5 cubic centimeters per gram, measured inside the package.

The product of claim 1 wherein the package is a non-pressurized package selected from the group consisting of a pouch and a chub, the package having an internal package pressure in the range from 0 to 12 pounds per square inch (gauge) upon refrigerated storage at 50 degrees Fahrenheit for 12 weeks.

8. The product of claim 1 wherein the package is a pressurized package having an internal package pressure in the range from 12 to 27 pounds per square inch (gauge), upon refrigerated storage at 50 degrees Fahrenheit for 12 weeks.

9. The dough composition of claim 1 comprising sorbate in an amount to inactivate the low temperature inactive yeast at refrigerated temperature without killing the yeast.

10. A chemically leavened, proofed, refrigerated packaged dough composition prepared from ingredients comprising

water,

flour,

basic chemical leavening agent,

acidic chemical leavening agent,

from 0.0075 to 1.5 weight percent low temperature inactive yeast, based on the total weight of the dough composition, and

0.025 to 0.2 weight percent sorbate salt, based on the total weight of the dough composition to inactivate the low temperature inactive yeast at refrigerated temperature, wherein the proofed dough composition has expanded within the package to a raw specific volume of about 1.1 to about 1.5 cubic centimeters per gram and to seal the package from inside, and the package has an internal package pressure less than 30 pounds per square inch (gauge) upon refrigerated storage.

11. The composition of claim 10 , the ingredients comprising

from 10 to 32 weight percent water,

from 0.0075 to 1.5 weight percent low temperature inactive yeast,

from 0.5 to 5 weight percent sugar,

from 40 to 60 weight percent flour,

from 0.5 to 1.5 weight percent basic chemical leavening agent,

from 0.5 to 3.0 weight percent acidic chemical leavening agent, and

from 0.025 to 0.2 weight percent sorbate salt, all based on total weight dough composition.

12. The packaged dough composition of claim 10 , wherein the package has an internal pressure in a range from 12 to 30 pounds per square inch (gauge).

13. The packaged dough composition of claim 10 , wherein the dough has a raw specific volume in a range from about 1.1 to about 1.5 cubic centimeters per gram when dough volume and mass are measured inside of the package.

14. The packaged dough composition of claim 10 wherein the packaged dough exhibits an internal pressure of between greater than atmospheric pressure and not greater than 30 pounds per square inch (gauge) during refrigerated storage of 12 weeks at 45 degrees Fahrenheit.

The packaged dough composition of claim 10 , wherein the packaged dough composition is refrigeration-stable and can be stored at refrigerated conditions for a time period of at least 6 weeks at a temperature of 45 degrees Fahrenheit without suffering damage due to expansion of the dough within the package.
