Abstract

Technique for making a cream cheese product comprising steps of: providing a milkfat fluid comprising butterfat; pasteurizing the milkfat fluid; homogenizing the milkfat fluid; and culturing bacteria in the milkfat fluid; producing a cream cheese product comprising live probiotic bacteria cultures. Cream cheese product comprising: between about 10% by weight and about 55% by weight of total butterfat; and a live probiotic bacteria culture.

Claims (14)

1. A composition, comprising:

a cream cheese product including a milkfat fluid, mesophilic bacteria, and live and active thermophilic lactic acid-producing probiotic bacteria;

wherein the composition has an acidic pH within a range of between about 5.0 and about 4.1.

2. The composition of claim 1 , having less than about 1% syneresis by weight after 15 hours at a temperature within a range of between about 74° F. an about 75° F.

3. The composition of claim 1 , including a stabilizer.

4. The composition of claim 1 , including a non-digestible oligosaccharide or a digestion-resistant polysaccharide.

5. The composition of claim 1 , wherein the mesophilic bacteria include mesophilic bacteria being of a strain that includes Lactococcus lactis lactis, Lactococcus lactis cremoris, Lactococcus lactis diacetylactis , or Leuconostoc.

6. The composition of claim 1 , wherein the live and active thermophilic lactic acid-producing probiotic bacteria include bacteria being of a strain that includes Lactobacillus delbrueckii subspecies bulgaricus, Streptococcus thermophilus, Lactobacillus acidophilus, Bifidobacterium , or Lactobacillus paracasei subspecies casei.

7. The composition of claim 1 , wherein the milkfat fluid includes whole milk, cream, skim milk, or reconstituted dry milk.

8. The composition of claim 1 , wherein the acidic pH is within another range of between about 4.6 and about 4.4.

9. The composition of claim 1 , wherein the acidic pH is within another range of between about 4.38 and about 4.50.

10. The composition of claim 1 , including inulin, lactulose, or lactitol.

11. The composition of claim 1 , wherein the cream cheese product includes butterfat, and wherein the composition includes by weight about 10% to about 55% butterfat.

12. The composition of claim 11 , wherein the cream cheese product includes milk protein, and wherein the composition includes by weight about 2% to about 10% milk protein.
