Aqueous Gellan Dispersion
The present invention relates to an aqueous gellan dispersion comprising 0.8 to 8 wt-% gellan, 1 to 20 wt-% of at least one salt from a divalent cation, and 0.3 to 3 wt-% of at least one acid, a beverage concentrate comprising said dispersion, a ready-to-drink beverage comprising the beverage concentrate and a method for the preparation of said ready-to-drink beverage.
1 . An aqueous gellan dispersion comprising 0.8 to 8 wt-% gellan, 1 to 20 wt-% of at least one salt from a divalent cation, and 0.3 to 3 wt-% of at least one acid.
2 . The aqueous gellan dispersion according to claim 1 comprising 1 to 5 wt-% gellan.
3 . The aqueous gellan dispersion according to claim 1 comprising 3 to 15 wt-% of at least one salt of a divalent cation.
4 . The aqueous gellan dispersion according to claim 1 comprising 0.6 to 2 wt-% of at least one acid.
5 . The aqueous gellan dispersion according to claim 1 , wherein the at least one salt from a divalent cation is a calcium salt and/or a magnesium salt.
6 . The aqueous gellan dispersion according to claim 1 , wherein the at least one salt from a divalent cation is selected from calcium lactate, calcium chloride, calcium citrate, calcium carbonate, magnesium lactate, magnesium chloride, magnesium citrate, magnesium carbonate.
7 . The aqueous gellan dispersion according to claim 1 , wherein the at least one salt from a divalent cation is calcium lactate.
8 . The aqueous gellan dispersion according to claim 1 , wherein the at least one acid is an organic and/or inorganic acid.
9 . The aqueous gellan dispersion according to claim 1 , wherein the at least one acid is malic acid.
10 . The aqueous gellan dispersion according to claim 1 , further comprising a food preservative.
11 . The aqueous gellan dispersion according to claim 1 , further comprising a sequestrant.
12 . A beverage concentrate comprising the aqueous gellan dispersion according to claim 1 .
13 . A ready-to-drink beverage comprising the concentrate according to claim 12 .
14 . A method for the preparation of an aqueous gellan dispersion according to claim 1 comprising the steps of dispersing gellan and at least one acid into an aqueous solution of at least one salt of a divalent cation.
15 . A method for the preparation of a ready-to-drink beverage comprising the steps of mixing the aqueous gellan dispersion according to claim 1 with further ingredients of a beverage, and pasteurizing the resulting mixture.
