Abstract

A poultry wing segmenting blade to segment a poultry wing into segments at the poultry wing joint, the blade includes a bifurcated blade having a first edge and a second edge, and further comprises a guide, the guide configured to align the poultry wing joint with the bifurcated blade configured to separate the joint and cut the poultry wing and, thus, functions to produce consistent high speed joint cuts without producing shattered or fragmented bone segments, exposed open bone areas, and/or bone marrow contamination.

Claims (42)

1. A poultry wing segmenting blade to segment a poultry wing into segments at the poultry wing joint, said blade comprising:

a bifurcated blade having a first edge and a second edge configured to separate the joint and cut the poultry wing; and

a guide, said guide configured to align the poultry wing joint with said bifurcated blade.

2. The blade of claim 1 , wherein said a first edge and a second edge are beveled.

3. The blade of claim 1 , wherein said bifurcated blade further comprises a blade handle.

4. The blade of claim 3 , wherein said blade handle further comprises an aperture.

5. The blade of claim 1 , wherein said guide further comprises a first guide and a second guide configured to align the poultry wing joint therebetween.

6. The blade of claim 5 , wherein said first guide further comprises a guide wire configured to align the poultry wing joint with said bifurcated blade.

7. The blade of claim 6 , wherein said first guide wire further comprises a dull section to locate the poultry wing joint.

8. The blade of claim 5 , wherein said second guide further comprises a guide edge configured to align the poultry wing joint with said bifurcated blade.

9. The blade of claim 8 , wherein said second guide edge further comprises a dull section to locate the poultry wing joint.

10. The blade of claim 8 , wherein said bifurcated blade further comprises a blade handle receptacle configured to receive said blade handle.

11. The blade of claim 10 , wherein said bifurcated blade further comprises an attachment device configured to releasably affix said blade handle to said blade handle receptacle.

12. A method of segmenting a poultry wing having a poultry wing joint, said method comprising the steps of:

providing a bifurcated blade having a first edge and a second edge configured to separate the joint and cut the poultry wing, and said bifurcated blade having a guide configured to align the poultry wing joint with said bifurcated blade;

guiding the poultry wing along said guide;

aligning the poultry wing joint with said guide;

directing the poultry wing joint toward said bifurcated blade;

separating the poultry wing joint with said guide; and

cutting the poultry wing at the poultry wing joint with said bifurcated blade.

13. The method of claim 12 , wherein said guide further comprises a first guide and a second guide.

14. The method of claim 13 , further comprising the step of aligning the poultry wing joint therebetween said first guide and said second guide.

15. A poultry wing segmenting system for segmenting poultry wings into segments comprising:

a wing wheel assembly having:

a plurality of lateral troughs circumferentially spaced about a drive axis, each trough is configured for receiving one of the poultry wings;

at least one annular slot; and

a stationary bifurcated blade aligned with one of said annular slots, said bifurcated blade having a first edge and a second edge configured to separate the joint and cut the poultry wing.

16. The poultry wing segmenting system of claim 15 , wherein the bifurcated blade including a blade opening between said first edge and said edge.

17. The poultry wing segmenting system of claim 15 , wherein said first edge and second edge of the bifuricated blade are beveled.

18. The poultry wing segmenting system of claim 15 , wherein each trough including:

a second wheel segment for receiving and supporting the poultry wing flat; and

a third wheel segment for receiving and supporting the poultry wing tip;

wherein, one of said at least one annular slots is between each of said second wheel segments and each of said third wheel segments in each of said troughs; and

wherein, said bifurcated blade is aligned with said annular slot between each of said second wheel segments and each of said third wheel segments in each of said troughs for cutting the joint between the poultry wing flat and the poultry wing tip.

19. The poultry wing segmenting system of claim 15 , wherein said bifurcated blade further comprising:

a blade handle including an aperture;

a blade handle receptacle configured to receive said blade handle; and/or

a guide configured to align the poultry wing joint with the bifurcated blade, said guide comprising:

a first guide and a second guide configured to align the poultry wing joint therebetween;

a guide wire configured to align the poultry wing joint with said bifurcated blade;

a dull section to locate the poultry wing joint; and/or

a guide edge configured to align the poultry wing joint with said bifurcated blade.
