Abstract

Provided is a nutritionally enhanced derivative (isolate) from Stabilized Rice Bran (SRB) with improved antioxidant, fat and protein levels enhancing both the nutritional and yield values over existing techniques. Also provided is an improved method that utilizes certain enzyme combinations under various time and temperature conditions for extracting these nutritionally enhanced isolates from SRB.

Claims (3)

1. A nutritionally enhanced isolate of Stabilized Rice Bran comprising from 0.86 to 2.78 percent as-is protein, wherein said isolate is prepared using a combination of enzymes comprising: a-beta-glucanase enzyme; a thermotolerant protease enzyme mix derived from Carica papaya ; and a thermostable alpha amylase enzyme.

2. A nutritionally enhanced isolate of Stabilized Rice Bran comprising from 0.93 to 2.5 percent as-is fat, wherein said isolate is prepared using a combination of enzymes comprising: a-beta-glucanase enzyme; a thermotolerant protease enzyme mix derived from Carica papaya ; and a thermostable alpha amylase enzyme.

3. A nutritionally enhanced isolate of Stabilized Rice Bran comprising from 0.86 to 2.78 percent as-is protein, from 0.93 to 2.5 percent as-is fat, wherein said isolate is prepared using a combination of enzymes comprising: a-beta-glucanase enzyme; a thermotolerant protease enzyme mix derived from Carica papaya ; and a thermostable alpha amylase enzyme.
