Colorant compounds derived from genipin or genipin containing materials
The present disclosure provides colorant compounds and methods of isolation of the colorant compounds derived from a reaction of genipin and an amine. The colorant compositions comprise purified compounds (e.g., a purified polymer or a purified dimer) obtained from multiple fractioning by chromatography of the reaction resulting material. The purified polymer or dimer can be used as a colorant by itself or in combination with another colorant for imparting color to a food, a drug, a cosmetic, a medical device, and textile products.
1. A method of preparing of a black colorant composition comprising
(a) preparing a juice extract from Genipa americana fruit, wherein the juice extract is raw liquid Genipa americana juice;
(b) mixing the juice extract and proline to form a mixture; and
(c) isolating a black colorant composition from the mixture of (b).
2. A black colorant composition prepared by the method of claim 1 .
3. A method of preparing of a green colorant composition comprising
(a) preparing a juice extract from Genipa americana fruit, wherein the juice extract is raw liquid Genipa americana juice;
(b) mixing the juice extract and tryptophan to form a mixture; and
(c) isolating a green colorant composition from the mixture of (b).
4. A green colorant composition prepared by the method of claim 3 .
5. A food product comprising a food item and the black colorant composition of claim 2 .
6. The food product of claim 5 , wherein the food item is a solid food item or a liquid food item.
7. The food product of claim 6 , wherein the food item is a beverage.
8. A food product comprising a food item and the green colorant composition of claim 4 .
9. The food product of claim 8 , wherein the food item is a solid food item or a liquid food item.
10. The food product of claim 9 , wherein the food item is a beverage.
11. A drug or nutraceutical product comprising a drug or nutraceutical and the green colorant composition of claim 4 .
12. The drug or nutraceutical product of claim 11 , wherein the drug or nutraceutical is in a dosage form selected from the group consisting of tablets, gel caps, beads, pellets, pills, dragees, lozenges, ointments, capsules, powders, liquids, gels, syrups, slurries, and suspensions.
13. A cosmetic product comprising the green colorant composition of claim 4 .
14. The method of claim 1 , further comprising heating the mixture of juice extract and proline after step (b).
15. The method of claim 3 , further comprising heating the mixture of juice extract and tryptophan after step (b).
16. The method of claim 1 , further comprising purifying the black colorant composition of (c).
17. The method of claim 3 , further comprising purifying the green colorant composition of (c).
18. The method of claim 3 , wherein no additional ingredients are added to the raw liquid Genipa americana juice prior to step (b).
19. The method of claim 3 , wherein the tryptophan is in an isolated form.
20. The method of claim 3 , wherein the tryptophan is mixed with the juice extract in an equimolar amount relative to the amount of genepin in the juice extract.
21. The method of claim 1 , wherein no additional ingredients are added to the raw liquid Genipa americana juice prior to step (b).
22. The method of claim 1 , wherein the proline is in an isolated form.
23. The method of claim 1 , wherein the proline is mixed with the juice extract in an equimolar amount relative to the amount of genepin in the juice extract.
24. A drug or nutraceutical product comprising a drug or nutraceutical and the black colorant composition of claim 2 .
