MODULATION OF TISSUE FATTY ACID COMPOSITION OF A HOST BY HUMAN GUT BACTERIA
The current invention provides use of a CLA-producing bacterium for the in vivo conversion in the gut of polyunsaturated fatty acids to CLA. The CLA-producing bacterium is selected from one or more of the group consisting of propionibacteria, lactobacilli, lactococci and streptococci, and bifidobacteria.

26 . A method for altering a fatty acid composition of internal organs of a body of a subject, the method comprising administering to the subject a product comprising at least one bacterium selected from:
Bifidobacterium breve as deposited at the National Culture of Industrial and Marine Bacteria under accession no. 702258;
Bifidobacterium breve as deposited at the National Culture of Industrial and Marine Bacteria under the accession no. 41497; or
Bifidobacterium longum deposited at the National Culture of Industrial and Marine Bacteria under the accession no. 41508.
27 . The method of claim 26 , wherein the product further comprises a pharmaceutically acceptable additive.
28 . The method of claim 26 , wherein the product further comprises a nutritionally acceptable additive.
29 . The method of claim 26 , wherein the product is a foodstuff selected from a yogurt, a yogurt drink, a cheese, a milk, a spread, a fruit juice, flavoured water, or unflavoured water.
30 . The method of claim 26 , wherein the product further comprises a substrate capable of being converted into a bioactive compound in vivo by the bacterium.
31 . The method of claim 30 , wherein the substrate is a polyunsaturated fatty acid.
32 . The method of claim 31 , wherein the polyunsaturated fatty acid is linoleic acid, linolenic acid, oleic acid, palmitic acid, or stearic acid.
33 . A foodstuff comprising:
at least one bacterium selected from:
Bifidobacterium breve as deposited at the National Culture of Industrial and Marine Bacteria under the accession no. 702258;
Bifidobacterium breve as deposited at the National Culture of Industrial and Marine Bacteria under the accession no. 41497; or
Bifidobacterium longum as deposited at the National Culture of Industrial and Marine Bacteria under the accession no. 41508;
a nutritionally acceptable additive; and
a substrate capable of being converted into a bioactive compound in vivo by the bacterium.
34 . The foodstuff of claim 33 , wherein the substrate is a polyunsaturated fatty acid.
35 . The foodstuff of claim 34 , wherein the polyunsaturated fatty acid is linoleic acid, linolenic acid, oleic acid, palmitic acid, or stearic acid.
