Abstract

Disclosed herein are aqueous compositions comprising fructose and methods of production thereof. A method for producing an aqueous composition comprising fructose can comprise, for example, conducting an enzymatic reaction by contacting water, sucrose, and a glucosyltransferase enzyme that synthesizes poly alpha-1,3-glucan having at least 30% alpha-1,3-linkages. A soluble fraction produced by such a reaction comprises at least about 55% fructose on a dry weight basis, and can be separated from insoluble poly alpha-1,3-glucan product(s), thereby providing an aqueous composition comprising fructose.

Claims (24)

1. An aqueous composition comprising:

at least about 55% fructose on a dry weight basis, and soluble oligosaccharides comprising maltulose, isomaltose, leucrose, trehalulose, isomaltulose, and nigerose.

2. The aqueous composition of claim 1 , wherein the aqueous composition comprises at least about 65% fructose on a dry weight basis.

3. The aqueous composition of claim 1 , wherein the aqueous composition comprises less than about 30% of said soluble oligosaccharides on a dry weight basis.

4. The aqueous composition of claim 1 , wherein the aqueous composition is comprised within, or is, an ingestible product, and optionally is used as a sweetener of the ingestible product.

5. The aqueous composition of claim 4 , wherein the aqueous composition has (i) a conductivity less than about 50 μS/cm at about 30 wt % dry solids and (ii) an ICUMSA value less than about 50.

6. The aqueous composition of claim 4 , wherein the ingestible product is a food, beverage, animal feed, human or animal nutritional product, pharmaceutical product, or oral care product.

7. The aqueous composition of claim 6 , wherein the ingestible product is a food, beverage, or human nutritional product.

8. The aqueous composition of claim 2 , wherein the aqueous composition comprises at least about 70% fructose on a dry weight basis.

9. The aqueous composition of claim 8 , wherein the aqueous composition comprises at least about 75% fructose on a dry weight basis.

10. The aqueous composition of claim 9 , wherein the aqueous composition comprises at least about 80% fructose on a dry weight basis.

11. The aqueous composition of claim 10 , wherein the aqueous composition comprises at least about 85% fructose on a dry weight basis.

12. The aqueous composition of claim 11 , wherein the aqueous composition comprises at least about 90% fructose on a dry weight basis.

13. The aqueous composition of claim 12 , wherein the aqueous composition comprises at least about 95% fructose on a dry weight basis.

14. The aqueous composition of claim 1 , wherein borate is undetectable in the aqueous composition.

15. The aqueous composition of claim 1 , wherein the aqueous composition comprises about 3% to about 24% glucose on a dry weight basis.

16. The aqueous composition of claim 3 , wherein the aqueous composition comprises less than about 20% of said soluble oligosaccharides on a dry weight basis.

17. The aqueous composition of claim 16 , wherein the aqueous composition comprises less than about 15% of said soluble oligosaccharides on a dry weight basis.

18. The aqueous composition of claim 17 , wherein the aqueous composition comprises less than about 10% of said soluble oligosaccharides on a dry weight basis.

19. The aqueous composition of claim 18 , wherein the aqueous composition comprises less than about 5% of said soluble oligosaccharides on a dry weight basis.

20. The aqueous composition of claim 1 , wherein said soluble oligosaccharides further comprise turanose.

21. The aqueous composition of claim 1 , wherein said soluble oligosaccharides further comprise a fructan disaccharide.

22. The aqueous composition of claim 1 , wherein said soluble oligosaccharides further comprise sucrose.

23. The aqueous composition of claim 1 , wherein said soluble oligosaccharides further comprise turanose, a fructan disaccharide, and sucrose.
