Abstract

The present disclosure provides a composition comprising (i) at least about 20% protein by dry weight, wherein said protein is not animal-derived protein, (ii) at least 20% by dry weight intact yeast cells, (iii) 20% to 70% plant-derived flour, (iv) at least 15% plant-derived starch selected from amylose, amylopectin and a combination thereof, (v) a vegetable oil, and (vi) a nutritional supplement comprising a plurality of vitamins and a plurality of minerals, wherein said composition has a water content that is less than or equal to about 30% water by weight, and wherein the product is produced by heat expanded extrusion.

Claims (29)

1. A composition, comprising,

(i) at least about 20% protein by dry weight, wherein said protein is not animal-derived protein,

(ii) at least 20% by dry weight intact yeast cells,

(iii) 20% to 70% plant-derived flour,

(iv) at least 15% plant-derived starch selected from amylose, amylopectin and a combination thereof,

(v) a vegetable oil, and

(vi) a nutritional supplement comprising a plurality of vitamins and a plurality of minerals,

wherein said composition has a water content that is less than or equal to about 30% water by weight,

and wherein the product is produced by heat expanded extrusion.

2. The composition of claim 1 , wherein said composition comprises at least about 30% fungal cells by dry weight.

3. The composition of claim 2 , wherein said fungal cells further comprise one or more of Aspergillus oryzae, Fusarium venenatum, Geotrichum candidum, Penicillium camemberti , or Penicillium roqueforti.

4. The composition of claim 1 , wherein said composition has a cutting force that is less than about 5 kilogram-force.

5. The composition of claim 1 , wherein said composition has a density of from about 0.3 to 1.3 grams per cubic centimeter.

6. The composition of claim 1 , wherein said water content is from about 15% to 30% by weight.

7. The composition of claim 1 , wherein said water content is less than or equal to about 15% by weight.

8. The composition of claim 1 , further comprising a non-animal heme-containing protein.

9. The composition of claim 1 , further comprising at least about 4% by dry weight ribonucleic acids encoded by said one or more fungal genomes.

10. The composition of claim 9 , further comprising at least about 6% by dry weight ribonucleic acids encoded by said one or more fungal genomes.

11. The composition of claim 1 , further comprising bacteria.

12. The composition of claim 11 , wherein said bacteria are selected from the group consisting of Bifidobacterium bifidum, Lactobacillus acidophilus, Lactobacillus casei, Lactobacillus delbrueckii subspecies bulgaricus, Lactobacillus rhamnosus, Lactobacillus rhamnosus , and combinations thereof.

13. The composition of claim 1 , wherein said protein comprises an amino acid sequence encoded by one or more bacterial genomes.

14. The composition of claim 1 , wherein said composition is a molded or shaped composition.

The composition of claim 1 , wherein a portion of said protein is provided by one or more ingredients selected from pumpkin puree, squash puree, flax seed meal, flaxseed, nut butter, peanut butter, carrot powder, potato flour, sweet potato flour, potato powder, sweet potato powder, rice flour, oat flour, pea protein, ground peas, fruit dried potatoes, dried chickpeas, and chickpea flour.

The composition of claim 15 , wherein said plant-derived flour comprises one or more of wheat flour, flaxseed flour, rice flour, corn flour, corn gluten, corn bran, corn starch, barley flour, sorghum flour, oat flour, potato flour, rye flour, soybean flour, buckwheat flour, or brown rice flour.

17. The composition of claim 16 , comprising at least about 30% protein by dry weight.

The composition of claim 1 , wherein said plant-derived flour is comprises one or more of wheat flour, flaxseed flour, rice flour, corn flour, corn gluten, corn bran, corn starch, barley flour, sorghum flour, oat flour, potato flour, rye flour, soybean flour, buckwheat flour, or brown rice flour.

19. The composition of claim 18 , wherein the composition has a cutting force that is less than about 5 kilogram-force.

20. The composition of claim 1 , comprising at least about 30% protein by dry weight.

21. The composition of claim 2 , comprising at least about 30% protein by dry weight.
