POLYPEPTIDES HAVING TRANSGALCTOSYLATING ACTIVITY
The present invention relates to polypeptides, specifically polypeptides having transgalactosylating activity and nucleic acids encoding these, and their uses in e.g. dairy product.
1 . A polypeptide having transgalactosylating activity selected from the group consisting of:
a. a polypeptide comprising an amino acid sequence having at least 90% sequence identity with SEQ ID NO: 1, wherein said polypeptide consists of at most 950, 940, 930, 920, 910, 900, or 890 amino acid residues.
2 . The polypeptide according to claim 1 comprising an amino acid sequence having at least 90% sequence identity with SEQ ID NO: 1, wherein said polypeptide consists of at most 890 amino acid residues.

5 . The polypeptide according to claim 1 which consists of the amino acid sequence of SEQ ID NO: 1.

7 . The polypeptide according to claim 1 , wherein said polypeptide has a ratio of transgalactosylation activity above 100%.
8 . A nucleic acid capable of encoding a polypeptide according to claim 1 .
9 . An expression vector comprising a nucleic acid according to claim 8 .
10 . A cell capable of expressing a polypeptide according to claim 1 .
11 . A method of expressing a polypeptide, the method comprising obtaining a cell according claim 10 and expressing the polypeptide from the cell, and optionally purifying the polypeptide.
12 . A composition comprising a polypeptide according to claim 1 , preferably a food composition, more preferably a dairy product.
13 . A method for producing a food product by treating a substrate comprising lactose with a polypeptide according to claim 1 .
14 . A method for producing a dairy product by treating a milk-based substrate comprising lactose with a polypeptide according to claim 1 .
15 . A process for producing galacto-oligosaccharides, comprising contacting of a polypeptide of according to claim 1 with a milk-based solution comprising lactose.
