Abstract

Methods, systems, and apparatuses for the accelerated aging of beverages, including distilled spirits are disclosed. A spirit is aged through a modular approach that targets development of individual sensory characteristics. In one embodiment, a spirit undergoes ultrasonic cavitation in the presence of wood chips, heating in the presence of wood chips, ultrasonic cavitation without wood chips, heating without wood chips, and intermittent aeration. The process is operable to produce a highly customized spirit and achieve a taste, bouquet, and color similar to that of traditionally aged spirits.

Claims (40)

1. A method for accelerating aging of a beverage, comprising:

applying a first ultrasonic energy to a fluid in a reaction chamber for at least one hour, and maintaining a first temperature of the fluid while the fluid is in the presence of a wood load or an organic material load;

applying a first heat to the fluid and maintaining a second temperature of the fluid of at least approximately 100° F. for at least one hour;

removing the wood load or the organic material load from the reaction chamber;

applying a second ultrasonic energy to the fluid in the reaction chamber for at least one hour and simultaneously cooling the fluid for at least some time during the applying the second ultrasonic energy;

applying a second heat to the fluid and maintaining a third temperature of the fluid of at least approximately 100° F. for at least one hour; and

applying at least one gas to the fluid;

wherein the applying the first ultrasonic energy, the applying the first heat, the removing the wood load or the organic material load from the reaction chamber, the applying the second ultrasonic energy, and the applying the second heat in the reaction chamber occur sequentially; and

wherein the applying the first heat and/or the applying the second heat is performed by a shell-and-tube heat exchanger.

2. The method of claim 1 , further comprising maintaining the first temperature at less than or equal to approximately 85° F.

3. The method of claim 1 , further comprising maintaining the first temperature between approximately 45° F. and 85° F. during the applying the first ultrasonic energy.

4. The method of claim 1 , wherein the first ultrasonic energy is applied with an energy of at least approximately 4 kilowatt-hours, and wherein the second ultrasonic energy is applied with an energy of at least approximately 6 kilowatt-hours.

5. The method of claim 1 , wherein the first ultrasonic energy is applied at a first rate of at least approximately 5 watt-hours per liter, and wherein the second ultrasonic energy is applied at a second rate of at least 5 watt-hours per liter.

The method of claim 1 , wherein the applying the first ultrasonic energy occurs for at least approximately 3 hours, the applying the first heat occurs for at least approximately 6 hours, the applying the second ultrasonic energy occurs for at least approximately 3 hours, and the applying the second heat occurs for at least approximately 6 hours.

7. The method of claim 6 , wherein the applying the first heat occurs for at least approximately 12 hours and the applying the second heat occurs for at least approximately 12 hours.

8. The method of claim 1 , wherein the second temperature is at least 125° F., and the third temperature is at least 125° F.

9. A method for producing a beverage, comprising:

applying a first ultrasonic energy to a fluid in a reaction chamber for at least one hour while the fluid is in the presence of a wood load or an organic material load;

applying a first heat to the fluid and maintaining a first temperature of the fluid of at least approximately 100° F. for at least one hour while the fluid is in the presence of the wood load or the organic material load;

applying a second ultrasonic energy to the fluid in the reaction chamber for at least one hour while the fluid is not in the presence of the wood load or the organic material load;

applying a second heat to the fluid and maintaining a second temperature of the fluid of at least approximately 100° F. for at least one hour while the fluid is not in the presence of the wood load or the organic material load; and

applying at least one gas to the fluid;

wherein the applying the first ultrasonic energy, the applying the first heat, the applying the second ultrasonic energy, and the applying the second heat occur sequentially; and

wherein the applying the first heat and/or the applying the second heat is performed by a shell-and-tube heat exchanger.

10. The method of claim 9 , further comprising maintaining a third temperature of the fluid during the applying the first ultrasonic energy.

11. The method of claim 10 , further comprising maintaining the third temperature between approximately 45° F. and 85° F. during the applying the first ultrasonic energy.

12. The method of claim 9 , wherein the first ultrasonic energy is applied at a first rate of at least approximately 5 watt-hours per liter, and wherein the second ultrasonic energy is applied at a second rate of at least 5 watt-hours per liter.

13. The method of claim 9 , wherein the applying the first ultrasonic energy occurs for at least approximately 3 hours, the applying the first heat occurs for at least approximately 6 hours, the applying the second ultrasonic energy occurs for at least approximately 3 hours, and the applying the second heat occurs for at least approximately 6 hours.

14. A method for producing a beverage, comprising:

applying a first ultrasonic energy to a fluid in a reaction chamber for at least one hour;

applying a first heat to the fluid and maintaining a first temperature of the fluid of at least approximately 100° F. for at least one hour;

applying a second ultrasonic energy to the fluid in the reaction chamber for at least one hour;

applying a second heat to the fluid and maintaining a second temperature of the fluid of at least approximately 100° F. for at least one hour; and

applying at least one gas to the fluid;

wherein the applying the first ultrasonic energy, the applying the first heat, the applying the second ultrasonic energy, and the applying the second heat in the reaction chamber occur sequentially; and

wherein the applying the first heat and/or the applying the second heat is performed by a shell-and-tube heat exchanger.

15. The method of claim 14 , further comprising maintaining a third temperature between approximately 45° F. and 85° F. during the applying the first ultrasonic energy.

16. The method of claim 14 , wherein the first temperature is at least 125° F., and the second temperature is at least 125° F.

17. The method of claim 14 , wherein the first ultrasonic energy is applied at a first rate of at least approximately 5 watt-hours per liter, and wherein the second ultrasonic energy is applied at a second rate of at least 5 watt-hours per liter.

18. The method of claim 14 , wherein the applying the first ultrasonic energy occurs for at least approximately 3 hours, the applying the first heat occurs for at least approximately 6 hours, the applying the second ultrasonic energy occurs for at least approximately 3 hours, and the applying the second heat occurs for at least approximately 6 hours.
