Abstract

Non-dried allulose crystals are dried in a temperature treating step (b) in a drying apparatus at a temperature of about 25° C. to about 70° C., and in a conditioning step (c). The temperature treating step (b) may be carried out (b1) at atmospheric pressure and a residence time of about 5 minutes to about 5 hours. The temperature treating step (b) may be carried out (b2) under reduced pressure and constant temperature and a residence time from about 40 minutes to about 5 hours. The conditioning step (c) may be carried out (c1) over a period of about 30 minutes to 7 hours at a temperature from about 40° C. to about 70° C. The conditioning step (c) may be carried out (c2) over a period of about 15 minutes to about 90 hours at about 30 to about 60% relative humidity, and a temperature of about 25 to about 40° C.

(b) temperature treating the non-dried allulose crystals according to step (a) at a temperature in the range of about 25 to about 70° C. in a drying apparatus having 2 to 5 different heating zones to obtain an intermediate product, wherein the temperature treatment is carried out

(b1) at atmospheric pressure and a residence time in the range of about 5 minutes to about 5 hours, or

(b2) under reduced pressure and constant temperature and a residence time ranging from about 30 min to 5 hours, and

(c) conditioning the intermediate product obtained in step (b1) or (b2), wherein conditioning is carried out

(c1) over a period of about 30 min to 7 hours at a temperature in the range of about 40 to about 70° C., or

(c2) over a period of about 15 to about 90 hours with air of a relative humidity of about 30 to about 60% and at a temperature of about 25 to about 40° C.

2. The process according to claim 1 , wherein the non-dried allulose crystals according to step (a) have a purity greater than 95%-based on the total dry mass.

6. The process according to claim 1 , wherein a residence time per heating zone of the drying apparatus is about 1 to 8 minutes.

7. The process according to claim 1 , wherein temperature treatment according to step (b2) is carried out at a pressure of from about 5 to about 300 mbar.

8. The process according to claim 7 , wherein temperature treatment according to step (b2) takes place in the range from about 30 to about 40° C.

9. The process according to claim 7 , wherein a residence time in the drying apparatus is about 1 to 4 hours.

10. The process according to claim 1 , wherein conditioning according to step (c1) is carried out in the range from about 55 to about 65° C.

11. The process according to claim 10 , wherein conditioning according to step (c1) takes place over a period of about 30 minutes to 6 hours.

12. The process according to claim 1 , wherein conditioning according to step (c2) is carried out over a period of about 24 to about 72 hours at a temperature of about 30 to about 35° C.

(a) providing non-dried allulose crystals,

(b) temperature treating the non-dried allulose crystals according to step (a) at a temperature in the range of about 25 to about 70° C. in a drying apparatus having different heating zones to obtain an intermediate product, wherein the temperature treatment is carried out

(b1) at atmospheric pressure and a residence time in the range of about 5 minutes to about 5 hours, and

(c) conditioning the intermediate product obtained in step (b1), wherein conditioning is carried out

(c1) over a period of about 30 min to 7 hours at a temperature in the range of about 40 to about 70° C., or

(c2) over a period of about 15 to about 90 hours with air of a relative humidity of about 30 to about 60% and at a temperature of about 25 to about 40° C.;

wherein a residence time per heating zone of the drying apparatus is about 1 to 8 minutes.

14. The process of claim 13 , wherein
