Abstract

Provided herein include caffeinated, partially decaffeinated, and decaffeinated paraxanthine beverages, coffees and paraxanthine coffee beverages. Also provided are methods for the production of caffeinated, partially decaffeinated, and decaffeinated paraxanthine beverages, coffees and paraxanthine coffee beverages. In some embodiments, disclosed compositions may provide consumers with increased alertness and wakefulness, while preventing side effects commonly associated with caffeinated drinks.

Claims (21)

1. A method of simultaneously decaffeinating coffee beans and infusing paraxanthine into the coffee beans, comprising:

contacting coffee beans having a caffeine content of greater than 0.3% w/w with a solvent comprising between 1 g/L and 100 g/L paraxanthine.

2. The method of claim 1 , wherein the method further comprises separating the coffee beans from the solvent to provide decaffeinated coffee beans, wherein the caffeine content of the decaffeinated coffee beans is less than 0.3% w/w.

3. The method of claim 1 , wherein the caffeine content of the decaffeinated coffee beans is less than 0.25% w/w caffeine.

4. The method of claim 1 , wherein the paraxanthine content of the decaffeinated coffee beans is between 0.5% w/w to 4.0% w/w.

5. The method of claim 2 , wherein the paraxanthine content of the decaffeinated coffee beans is between 0.5% w/w to 4.0% w/w.

The method of claim 1 , wherein the solvent comprises one or more fluids selected from the group consisting of water, ethyl acetate, methylene chloride, liquid carbon dioxide, acetone, benzyl alcohol, 1,3-butylene glycol, castor oil, citric acid esters, ethanol, glycerin, hexane, isopropanol, methanol, 2-butanone, and 1,2-propanediol.

7. The method of claim 5 , wherein the solvent comprises one or more fluids selected from the group consisting of water, ethyl acetate, ethanol, methylene chloride, supercritical carbon dioxide, and isopropanol.

8. The method of claim 5 , wherein the solvent comprises one or more fluids selected from the group consisting of water, ethyl acetate, and ethanol.

9. The method of claim 5 , wherein the solvent consists of ethyl acetate, a mixture of ethyl acetate and ethanol, a mixture of water, ethyl acetate, and ethanol, or a mixture of ethyl acetate and water.

10. The method of claim 5 , wherein the solvent consists of water.

11. The method of claim 1 , wherein the method further comprises drying and roasting the coffee beans.

12. A method for preparing a decaffeinated, paraxanthine-containing, whole coffee bean composition comprising:

contacting whole coffee beans comprising a caffeine content of greater than 0.3% w/w with a solvent comprising between 1 g/L and 100 g/L paraxanthine, wherein caffeine is extracted from the whole coffee beans into the solvent and paraxanthine from the solvent is absorbed by the whole coffee beans in a single step; and

separating the whole coffee beans from the solvent to provide the composition, wherein the caffeine content of the whole coffee beans in the composition is reduced to less than 0.1% w/w and the paraxanthine content of the whole coffee beans in the composition is between 0.5% w/w to 4.0% w/w.

The method of claim 11 , wherein the solvent comprises one or more fluids selected from the group consisting of water, ethyl acetate, methylene chloride, liquid carbon dioxide, acetone, benzyl alcohol, 1,3-butylene glycol, castor oil, citric acid esters, ethanol, glycerin, hexane, isopropanol, methanol, 2-butanone, and 1,2-propanediol.

14. The method of claim 12 , wherein the solvent comprises one or more fluids selected from the group consisting of water, ethyl acetate, ethanol, methylene chloride, supercritical carbon dioxide, and isopropanol.

15. The method of claim 12 , wherein the solvent comprises one or more fluids selected from the group consisting of water, ethyl acetate, and ethanol.

16. The method of claim 12 , wherein the solvent consists of ethyl acetate, a mixture of ethyl acetate and ethanol, a mixture of water, ethyl acetate, and ethanol, or a mixture of ethyl acetate and water.

17. The method of claim 12 , wherein the solvent consists of water.

18. A method according to claim 12 , further comprising one or both of (i) drying of the paraxanthine-containing decaffeinated whole coffee beans, and (ii) roasting of the paraxanthine-containing decaffeinated whole coffee beans.
