Abstract

Systems for cellular attribute alignment of a base cellular agriculture product with a reference product include first data including a compositional profile of a reference product having a cellular attribute of interest, second data including a compositional profile of a base cellular agriculture product produced to emulate the cellular attribute of interest of the reference product, and processing circuitry configured to identify one or more target compounds in the reference product affecting the attribute of interest, determine at least one compositional gap in the base cellular agriculture product compared to the reference product, and provide an adjustment to a manufacturing process or a manufacturing component for the base cellular agriculture product to reduce or eliminate the at least one compositional gap in the base cellular agriculture product affecting the attribute of interest to produce an enhanced cellular agriculture product. Methods and cellular agriculture products made therefrom are also provided.

Claims (53)

1 . A system for cellular attribute alignment of a base cellular agriculture product with a reference product, comprising:

at least one memory including:

first data including a compositional profile of a reference product having a cellular attribute of interest, and

second data including a compositional profile of a base cellular agriculture product produced to emulate the cellular attribute of interest of the reference product; and

processing circuitry configured to:

identify, using the first data, one or more target compounds in the reference product affecting the attribute of interest,

determine at least one compositional gap in the base cellular agriculture product compared to the reference product by comparison of compositional levels of the one or more target compounds in the first data to corresponding compositional levels of the one or more target compounds in the second data, and

provide an adjustment to a manufacturing process or a manufacturing component for the base cellular agriculture product to reduce or eliminate the at least one compositional gap in the base cellular agriculture product affecting the attribute of interest to produce an enhanced cellular agriculture product.

2 . The system of claim 1 , wherein the compositional profiles of the base cellular agriculture product and the reference product each comprises a measurement of one or more of free fatty acids, nucleotides, amino acids, kokumi or umami peptides.

3 . The system of claim 1 , wherein the compositional profiles of the base cellular agriculture product and the reference product each comprises compositional data obtained using at least one of gas chromatography, mass spectrometry, liquid chromatography, or infrared spectroscopy.

4 . The system of claim 1 , further comprising an extraction and quantification component to obtain the second data, the extraction and quantification component comprising:

an applicator to apply an extraction solution to extract an analytical sample of the base cellular agriculture product;

at least one instrument configured to analyze the analytical sample and obtain a signal indicative of one or more analytes of interest; and

a detector configured to quantify the signal indicative of the one or more analytes of interest to provide the second data.

The system of claim 4 , wherein the analytical sample is obtained from less than 2 grams of the base cellular agriculture product, or wherein the extraction and analysis of the analytical sample does not substantially alter the emulated cellular attribute of interest of the base cellular agriculture product.

6 . The system of claim 1 , wherein the reference product comprises an animal or plant-based food product, an animal or plant-based material product, or another naturally-occurring agricultural product.

7 . The system of claim 1 , wherein the cellular attribute of interest comprises at least one of a flavor, a nutritional value, a color, an elasticity or a texture.

8 . The system of claim 1 , wherein the base cellular agriculture product comprises a cultivated food, a precision fermented food, a cultivated material product or another agricultural product produced from a cell culture.

9 . The system of claim 1 , wherein the processing circuitry is further configured to identify the one or more target compounds by comparing one or more identified compounds in the reference product to a threshold.

10 . The system of claim 1 , wherein the adjustment to the manufacturing process or the manufacturing component does not reduce or inhibit cellular growth or cellular viability of the enhanced cellular agriculture product compared to the base cellular agriculture product.

11 . The system of claim 1 , wherein the adjustment to the manufacturing process or the manufacturing component is configured to modify a growth phase or an expression phase of the base cellular agriculture product in a bioreactor.

The system of claim 1 , wherein the processing circuitry is further configured to provide the adjustment to the manufacturing process or the manufacturing component by formulating a target product to measure alignment or quality control of the enhanced cellular agriculture product compared to the reference product or to a target reference standard.

13 . The system of claim 12 , wherein the processing circuitry is further configured to control operation of a mixer to produce the formulated target product.

14 . The system of claim 1 , wherein the processing circuitry is further configured to provide the adjustment to the manufacturing process or the manufacturing component by formulating a culture supplement composition used to produce cells of the enhanced cellular agriculture product.

15 . The system of claim 14 , wherein the processing circuitry is further configured to control operation of a mixer to produce the formulated culture supplement composition.

16 . A method for cellular attribute alignment of a base cellular agriculture product with a reference product, comprising:

accessing, using a processor, first data including a compositional profile of a reference product having a cellular attribute of interest;

accessing, using the processor, second data including a compositional profile of a base cellular agriculture product produced to emulate the cellular attribute of interest of the reference product;

identifying, using the processor and the first data, one or more target compounds in the reference product affecting the attribute of interest;

determining, using the processor, at least one compositional gap in the base cellular agriculture product compared to the reference product by comparison of compositional levels of the one or more target compounds in the first data to corresponding compositional levels of the one or more target compounds in the second data; and

providing, using the processor, an adjustment to a manufacturing process or a manufacturing component for the base cellular agriculture product to reduce or eliminate the at least one compositional gap in the base cellular agriculture product affecting the attribute of interest to produce an enhanced cellular agriculture product.

17 . The method of claim 16 , wherein the compositional profiles of the base cellular agriculture product and the reference product each comprises a measurement of one or more of free fatty acids, nucleotides, kokumi or umami peptides.

18 . The method of claim 16 , wherein the compositional profiles of the base cellular agriculture product and the reference product each comprises compositional data obtained using at least one of gas chromatography, mass spectrometry, liquid chromatography, or infrared spectroscopy.

19 . The method of claim 16 , further comprising:

applying an extraction solution to extract an analytical sample of the base cellular agriculture product;

analyzing, using at least one instrument, the analytical sample and obtain a signal indicative of one or more analytes of interest; and

quantifying, using a detector, the signal indicative of the one or more analytes of interest to provide the second data.

The method of claim 19 , wherein the analytical sample is obtained from less than 2 grams of the base cellular agriculture product, or wherein the extraction and analysis of the analytical sample does not substantially alter the emulated cellular attribute of interest of the base cellular agriculture product.

The method of claim 16 , wherein the reference product comprises an animal or plant-based food product, an animal or plant-based material product, or another naturally-occurring agricultural product, or wherein the cellular attribute of interest comprises at least one of a flavor, a nutritional value, a color, an elasticity or a texture.

22 . The method of claim 16 , wherein the base cellular agriculture product comprises a cultivated food, a precision fermented food, a cultivated material product or another agricultural product produced from a cell culture.

23 . The method of claim 16 , further comprising identifying the one or more target compounds by comparing one or more identified compounds in the reference product to a threshold.

24 . The method of claim 16 , wherein the adjustment to the manufacturing process or the manufacturing component does not reduce or inhibit cellular growth or cellular viability of the enhanced cellular agriculture product compared to the base cellular agriculture product.

25 . The method of claim 16 , wherein the adjustment to the manufacturing process or the manufacturing component is configured to modify a growth phase or an expression phase of the base cellular agriculture product in a bioreactor.

The method of claim 16 , wherein providing the adjustment to the manufacturing process or the manufacturing component comprises formulating a target product to measure alignment or quality control of the enhanced cellular agriculture product compared to the reference product or to a target reference standard.

27 . The method of claim 26 , further comprising controlling operation of a mixer to produce the formulated target product.

28 . The method of claim 16 , wherein providing the adjustment to the manufacturing process or the manufacturing component comprises formulating a culture supplement composition used to produce cells of the enhanced cellular agriculture product.

29 . The method of claim 28 , further comprising controlling operation of a mixer to produce the formulated culture supplement composition.

30 . An enhanced cellular agriculture product made by cellular attribute alignment of a base cellular agriculture product with a reference product, comprising:

accessing, using a processor, first data including a compositional profile of a reference product having a cellular attribute of interest;

accessing, using the processor, second data including a compositional profile of a base cellular agriculture product produced to emulate the cellular attribute of interest of the reference product;

identifying, using the processor and the first data, one or more target compounds in the reference product affecting the attribute of interest;

determining, using the processor, at least one compositional gap in the base cellular agriculture product compared to the reference product by comparison of compositional levels of the one or more target compounds in the first data to corresponding compositional levels of the one or more target compounds in the second data; and

providing, using the processor, an adjustment to a manufacturing process or a manufacturing component for the base cellular agriculture product to reduce or eliminate the at least one compositional gap in the base cellular agriculture product affecting the attribute of interest to produce an enhanced cellular agriculture product.
