Abstract

One variation of a food production station includes: a manual assembly zone; an autonomous assembly zone; and a controller. The manual assembly zone includes: a prep surface; and a receptacle configured to receive a sequence of food hoppers configured to store ingredients for manual preparation of food products on the prep surface. The autonomous assembly zone includes: a sequence of module housings supporting the prep surface and configured to house a sequence of food dispensing modules configured to dispense ingredients into food containers; and a conveyor located within the sequence of module housings and configured to transfer food containers along the sequence of food dispensing modules for dispensation of ingredients into food containers. The controller is configured to: receive food orders; and coordinate motion of the conveyor and trigger the sequence of food dispensing modules to dispense ingredients into food containers to assemble food products according to food orders.

Claims (125)

1 . A food production station for assembling units of a food product type comprising:

a manual assembly zone comprising a food preparation surface located at a work surface height and configured for manual preparation of units of the food product type; and

an autonomous assembly zone below the food preparation surface and comprising:

a module housing:

supporting the food preparation surface at the work surface height; and

configured to transiently house a set of food dispensing modules configured to store and dispense amounts of ingredients for autonomous preparation of units of the food product type; and

a container positioner:

arranged below the set of food dispensing modules within the module housing; and

configured to selectively locate a food container below the set of food dispensing modules for dispensation of ingredients into the food container; and

a controller configured to:

receive a food order; and

coordinate motion of the container positioner and selectively trigger the set of food dispensing modules to dispense amounts of ingredients into the food container to assemble a unit of the food product type according to the food order.

2 . The food production station of claim 1 , wherein the controller is configured to:

track a timeseries of amounts of ingredients stored within the set of food dispensing modules; and

generate a first food record for the unit of the food product type based on the timeseries of amounts of ingredients.

3 . The food production station of claim 1 :

wherein the food preparation surface defines a receptacle configured to receive the set of food dispensing modules; and

wherein the set of food dispensing modules is configured to:

store amounts of ingredients for manual preparation of units of the food product type at the food preparation surface; and

store and automatically dispense amounts of ingredients for autonomous preparation of units of the food product type.

4 . The food production station of claim 3 , wherein the set of food dispensing modules comprises a first food dispensing module comprising:

a food hopper configured to seat within the receptacle to supply ingredients to the manual assembly zone and the autonomous assembly zone; and

an automatic dispenser coupled to the food hopper and configured to dispense amounts of ingredients from the food hopper toward the autonomous assembly zone.

5 . The food production station of claim 1 :

wherein the first module housing is configured to transiently house the set of food dispensing modules configured to store and dispense amounts of a first set of ingredients for autonomous preparation of units of the food product type;

further comprising a second module housing:

supporting the food preparation surface at the work surface height; and

configured to transiently house a second set of food dispensing modules configured to store and dispense amounts of a second set of ingredients for autonomous preparation of units of the food product type; and

wherein the container positioner comprises a sequence of positioner units comprising:

a first positioner unit, in the sequence of positioner units, arranged within the module housing and configured to selectively locate the food container below the set of food dispensing modules for dispensation of the first set of ingredients into the food container; and

a second positioner unit, in the sequence of positioner units, arranged within the second module housing and configured to selectively locate the food container below the second set of food dispensing modules for dispensation of the second set of ingredients into the food container.

6 . The food production station of claim 5 , further comprising a sequence of handoffs configured to transfer the food container between positioner units in the sequence of positioner units.

The food production station of claim 1 , wherein the container positioner comprises a belted conveyor arranged below the set of food dispensing modules within the module housing and configured to selectively locate the food container below the set of food dispensing modules for dispensation of ingredients into the food container.

8 . The food production station of claim 1 :

wherein the module housing defines an outlet;

further comprising a second module housing:

supporting the food preparation surface at the work surface height;

configured to transiently house a second set of food dispensing modules configured to store and dispense amounts of ingredients for autonomous preparation of units of the food product type; and

defining an inlet aligned to the outlet of the module housing; and

wherein the container positioner is configured to:

selectively locate the food container below the set of food dispensing modules for dispensation of ingredients into the food container;

selectively locate the food container below the second set of food dispensing modules for dispensation of ingredients into the food container; and

transfer the food container from within the first module housing to the second module housing via the inlet and the outlet.

9 . The food production station of claim 1 , further comprising:

a container module housing configured to transiently house a set of container dispensing modules configured to selectively dispense food containers according to food orders;

wherein the module housing is configured to receive the food container from the container module housing; and

a staging module housing configured to:

receive the food container from the module housing; and

transiently house a set of food staging modules configured to prepare the food container, loaded with ingredients, for delivery to a patron associated with the food order.

10 . The food production station of claim 1 :

wherein the module housing comprises a refrigeration unit and is configured to transiently house the set of food dispensing modules configured to store and dispense amounts of a set of cooled ingredients for autonomous preparation of units of the food product type; and

further comprising a second module housing:

supporting the food preparation surface at the work surface height;

comprising a heater unit; and

configured to transiently house a second set of food dispensing modules configured to store and dispense amounts of a set of heated ingredients for autonomous preparation of units of the food product type.

11 . The food production station of claim 1 :

further comprising a set of sensors:

coupled to the set of food dispensing modules; and

configured to output signals representing amounts of ingredients stored within the set of food dispensing modules; and

wherein the controller is configured to:

track a remaining amount of each ingredient, in a set of ingredients, stored in the set of food dispensing modules based on signals output by the set of sensors;

estimate a first remaining amount of a first ingredient stored in a first food dispensing module, in the set of food dispensing modules, based on a first signal output by a first sensor, in the set of sensors, coupled to the first food dispensing module;

predict a refill time for the first ingredient based on the first remaining amount; and

schedule an ingredient refill for the first ingredient at the refill time.

12 . The food production station of claim 1 :

further comprising a set of sensors configured to output signals representing temperatures of ingredients stored within the set of food dispensing modules; and

wherein the controller is configured to selectively trigger a temperature-regulating element, installed within the module housing, to regulate temperatures of ingredients stored within the set of food dispensing modules based on signals received from the set of sensors.

13 . The food production station of claim 1 :

further comprising an interface coupled to the module housing; and

wherein the controller is configured to:

track ingredient levels of each ingredient stored in the set of food dispensing modules; and

communicate with the interface to display an ingredient level of each ingredient loaded in the set of food dispensing modules.

14 . A food production station for assembling units of a food product type comprising:

a manual assembly zone comprising a food preparation surface located at a work surface height and configured for manual preparation of units of the food product type; and

an autonomous assembly zone below the food preparation surface and comprising:

a sequence of module housings:

supporting the food preparation surface at the work surface height; and

configured to transiently house a sequence of food dispensing modules configured to store and dispense amounts of ingredients for autonomous preparation of units of the food product type; and

a container positioner:

arranged below the sequence of food dispensing modules within the module housing; and

configured to transfer a set of food containers along the sequence of food dispensing modules for dispensation of ingredients into the set of food containers; and

a controller configured to:

receive a set of food orders; and

coordinate motion of the container positioner and selectively trigger the sequence of food dispensing modules to dispense amounts of ingredients into the set of food containers to assemble units of the food product type according to the set of food orders.

15 . The food production station of claim 14 , wherein the controller is configured to:

track timeseries of amounts of ingredients stored within the sequence of food dispensing modules;

receive a first food order, in the set of food orders, for a first unit of the food product type;

receive a second food order, in the set of food orders, for a second unit of the food product type;

generate a first food record for the first unit of the food product type based on a first timeseries of amounts of ingredients captured during autonomous preparation of the first unit of the food product type; and

generate a second food record for the second unit of the food product type based on a second timeseries of amounts of ingredients captured during manual preparation of the second unit of the food product type at the food preparation surface.

16 . The food production station of claim 14 :

wherein the sequence of module housing comprises:

a first module housing:

supporting the food preparation surface at the work surface height; and

configured to transiently house a first set of food dispensing modules, in the sequence of food dispensing modules, configured to store and dispense amounts of a first set of ingredients for autonomous preparation of units of the food product type; and

a second module housing:

supporting the food preparation surface at the work surface height;

configured to transiently house a second set of food dispensing modules, in the sequence of food dispensing modules, configured to store and dispense amounts of a second set of ingredients for autonomous preparation of units of the food product type; and

wherein the container positioner comprises a sequence of positioner units arranged within the sequence of module housings and comprising:

a first positioner unit, in the sequence of positioner units, arranged within the first module housing and configured to transfer the set of food containers along the first set of food dispensing modules for dispensation of ingredients, in the first set of ingredients, into the set of food containers; and

a second positioner unit, in the sequence of positioner units, arranged within the second module housing and configured to transfer the set of food containers along the second set of food dispensing modules for dispensation of ingredients, in the second set of ingredients, into the set of food containers.

17 . The food production station of claim 14 , wherein the sequence of module housings comprises:

a first module housing comprising a refrigeration unit and configured to transiently house a first set of food dispensing modules, in the sequence of food dispensing modules, configured to store and dispense a set of cooled ingredients; and

a second module housing comprising a heater unit and configured to transiently house a second set of food dispensing modules, in the sequence of food dispensing modules, configured to store and dispense a set of heated ingredients.

18 . The food production station of claim 14 :

further comprising a set of sensors:

coupled to the sequence of sequence of food dispensing modules; and

configured to output signals representing amounts of ingredients stored within the sequence of food dispensing modules; and

wherein the controller is configured to track a remaining amount of each ingredient, in a set of ingredients, stored in the sequence of food dispensing modules based on signals output by the set of sensors.

19 . The food production station of claim 14 , wherein the controller is configured to:

estimate a first remaining amount of a first ingredient stored in a first food dispensing module, in the sequence of food dispensing modules, based on a first signal output by a first sensor, in the set of sensors, coupled to the first food dispensing module;

predict a refill time for the first ingredient based on the first remaining amount; and

schedule an ingredient refill for the first ingredient at the refill time.

20 . A food production station for assembling units of a food product type comprising:

a sequence of module housings:

supporting a food preparation surface located at a work surface height; and

configured to transiently house a sequence of food dispensing modules configured to store and dispense amounts of ingredients, received from the sequence of food hoppers, for autonomous preparation of units of the food product type;

a container positioner:

located within the sequence of module housings adjacent the sequence of food dispensing modules; and

configured to transfer a first food container along the sequence of food dispensing modules for dispensation of a first set of ingredients into the first food container according to a first food order; and

a controller configured to:

receive the first food order;

coordinate motion of the container positioner and selectively trigger the sequence of food dispensing modules to dispense amounts of ingredients into the first food container to assemble a first food product according to the first food order;

track timeseries of amounts of ingredients stored within the sequence of food hoppers; and

generate a first food record for the first food product based on the timeseries of amounts of ingredients.
