Cream cheese products and methods of making the same
Technique for making a cream cheese product comprising steps of: providing a milkfat fluid comprising butterfat; pasteurizing the milkfat fluid; homogenizing the milkfat fluid; and culturing bacteria in the milkfat fluid; producing a cream cheese product comprising live probiotic bacteria cultures. Cream cheese product comprising: between about 10% by weight and about 55% by weight of total butterfat; and a live probiotic bacteria culture.
1. A process for making a cream cheese product comprising:
providing a milkfat fluid having a pH and being selected from a group consisting of whole milk, cream, skim milk, reconstituted dry milk, and mixtures;
pasteurizing said milkfat fluid;
homogenizing said milkfat fluid;
combining live and active thermophilic lactic acid-producing probiotic bacteria with said milkfat fluid;
culturing the thermophilic bacteria in said milkfat fluid to produce lactic acid until the pH is caused to be reduced to one point within a range of between about 5.0 and about 4.1; and
causing the pH of the milkfat fluid to be further reduced to another point within the range being lower than the one point, by combining the milkfat fluid with an edible acid supplementing the lactic acid produced by the thermophilic bacteria;
producing a cream cheese product including live and active thermophilic lactic acid-producing probiotic bacteria.
2. The process of claim 1 , including combining live and active probiotic bacteria with said milkfat fluid after culturing thermophilic bacteria in the milkfat fluid.
3. The process of claim 1 , wherein causing the pH of the milkfat fluid to be further reduced to another point within the range includes reducing the pH of the milkfat fluid to a point within a further range of between about 4.6 and about 4.4.
4. The process of claim 1 , including retaining whey from said milkfat fluid in said cream cheese product.
5. The process of claim 1 , including combining a stabilizer with said milkfat fluid.
6. The process of claim 1 , wherein said milkfat fluid includes by weight about 10% to about 52% butterfat, about 4% protein, and about 51.5% to about 36% water, with the balance constituted by other milk solids.
7. The process of claim 1 , including combining a non-digestible polysaccharide with the milkfat fluid.
8. The process of claim 1 , wherein combining live and active thermophilic lactic acid-producing probiotic bacteria with the milkfat fluid includes combining live and active thermophilic lactic acid-producing probiotic bacteria selected from a group consisting of Lactobacillus delbrueckii subspecies bulgaricus, Streptococcus thermophilus, Lactobacillus acidophilus, Bifidobacterium , and Lactobacillus paracasei subspecies casei.
9. The process of claim 1 , wherein causing the pH of the milkfat fluid to be further reduced to another point within the range includes reducing the pH of the milkfat fluid to a point within a further range of between about 4.38 and about 4.50.

The process of claim 1 , wherein culturing the thermophilic bacteria in the milkfat fluid to produce lactic acid includes holding the milkfat fluid at a temperature within a range of between about 95 degrees Fahrenheit and about 112 degrees Fahrenheit for a time period within, a range of between about 4 hours and about 8 hours.
11. The process of claim 1 , wherein culturing the thermophilic bacteria in the milkfat fluid to produce lactic acid includes holding the milkfat fluid at a temperature within a range of between about 65 degrees Fahrenheit and about 92 degrees Fahrenheit for a time period within a range of between about 14 hours and about 16 hours.
12. The process of claim 1 , wherein homogenizing the milkfat fluid includes subjecting the milkfat fluid to an elevated pressure within a range of between about 2,000 pounds per square inch and about 4,000 pounds per square inch.
13. The process of claim 1 , including combining inulin with the milkfat fluid.
