Abstract

The present invention relates to the discovery that certain non-naturally occurring, non-peptide amide compounds and amide derivatives, such as oxalamides, ureas, and acrylamides, are useful flavor or taste modifiers, such as a flavoring or flavoring agents and flavor or taste enhancer, more particularly, savory (the “umami” taste of monosodium glutamate) or sweet taste modifiers, —savory or sweet flavoring agents and savory or sweet flavor enhancers, for food, beverages, and other comestible or orally administered medicinal products or compositions.

Claims (24)

1. An amide compound having the following formula:

or a comestibly acceptable salt thereof;

wherein

R 1b is hydrogen or a lower alkyl; and

R 2 is a C 6 -C 10 branched alkyl.

2. The amide compound of claim 1 , wherein R 1b is hydrogen or methyl.

3. An ingestible composition comprising at least a flavor modulating amount of at least one amide compound, or a comestibly acceptable salt thereof; wherein the amide compound has a formula:

R 1b is independently hydrogen or a lower alkyl; and R 2 is a C 6 -C 10 branched alkyl.

4. The ingestible composition of claim 3 , which is a composition for human or animal consumption.

5. The ingestible composition of claim 3 , which is a food, beverage, or oral hygiene product.

6. The ingestible composition of claim 3 , which is a pharmaceutical composition for oral administration.

7. The ingestible composition of claim 3 , wherein the amide compound is present in a concentration from about 0.01 ppm to about 30 ppm.

8. The ingestible composition of claim 3 , wherein the amide compound is present in a concentration from about 0.05 ppm to about 15 ppm.

9. The ingestible composition of claim 3 , wherein the amide compound is present in a concentration from about 0.1 ppm to about 5 ppm.

10. The ingestible composition of claim 3 , wherein the amide compound is present in a concentration from about 0.1 ppm to about 3 ppm.

11. A food, beverage, or oral hygiene product or an ingestible pharmaceutical composition, for oral administration to human comprising at least a flavor modulating amount of at least one amide compound, or a comestibly acceptable salt thereof; wherein the amide compound has a formula:

R 1a and R 1b are independently hydrogen or a lower alkyl; and R 2 is a C 6 -C 10 branched alkyl.

12. The food, beverage or oral hygiene product or the ingestible composition of claim 11 , wherein the amide compound is present in a concentration from about 0.01 ppm to about 30 ppm.

13. The food, beverage or oral hygiene product or the ingestible composition of claim 11 , wherein the amide compound is present in a concentration from about 0.05 ppm to about 15 ppm.

14. The food, beverage or oral hygiene product or the ingestible composition of claim 11 , wherein the amide compound is present in a concentration from about 0.1 ppm to about 5 ppm.

15. The food, beverage or oral hygiene product or the ingestible composition of claim 11 , wherein the amide compound is selected from the group consisting of
