Abstract

An extracting method of extracting a beverage liquid from an extraction target includes a pressure reduction step of switching an interior of an extraction container in which the extraction target and a liquid are stored from a first air pressure to a second air pressure lower than the first air pressure, and an extraction step of extracting the beverage liquid from the extraction target. The first air pressure is an air pressure at which the liquid at a predetermined temperature does not boil, and the second air pressure is an air pressure at which the liquid that does not boil at the first air pressure boils. The switching from the first air pressure to the second air pressure is done by releasing the air pressure in the extraction container.

Claims (19)

1. An extracting method of extracting a coffee liquid from ground beans of roasted coffee beans, comprising:

a pressure reduction step of reducing a pressure in an extraction container in which the ground beans and a liquid are stored from a first air pressure which is an air pressure more than an atmospheric pressure to the atmospheric pressure; and

an extraction step, after the pressure reduction step, of extracting the coffee liquid from the ground beans,

wherein the first air pressure is an air pressure at which the liquid at a predetermined temperature does not boil,

the liquid which does not boil at the first air pressure boils at the atmospheric pressure, and

the reducing the pressure is done by an atmosphere-release in which the air pressure in the extraction container is released into an atmosphere.

2. An extracting apparatus for extracting a coffee liquid from ground beans of roasted coffee beans, comprising:

an extraction container;

a supply unit configured to supply a liquid and an air pressure to the extraction container; and

a control unit configured to control the supply unit,

wherein the control unit executes pressure reduction control of reducing the air pressure in the extraction container in which the ground beans and the liquid are stored from a first air pressure to a second air pressure lower than the first air pressure before extracting the coffee liquid from the ground beans,

the first air pressure is an air pressure at which the liquid at a predetermined temperature does not boil,

the second air pressure is an air pressure at which the liquid that does not boil at the first air pressure boils, and

the reducing is done by releasing the air pressure in the extraction container into an atmosphere around the apparatus.

3. The extracting method according to claim 1 , wherein the atmosphere-release is performed by opening a solenoid valve, which releases the air pressure in the extraction container into the atmosphere.

4. The extracting method according to claim 1 , wherein the atmosphere-release is performed without changing a volume in the extraction container.

5. The extracting method according to claim 1 , wherein a temperature of the liquid in the extraction container immediately after the atmosphere-release is higher than a boiling point of the liquid at the atmosphere.

6. The extracting method according to claim 1 , further comprising a pouring step of pouring a liquid into the extraction container in which the extraction target is stored before the pressure reduction step,

wherein a temperature of the liquid in the pouring step is higher than a boiling point of the liquid.
