Abstract

A protein-free soluble foaming composition is provided which contains carbohydrate particles having a plurality of voids containing entrapped pressurized gas. The composition may include a surfactant and may be contained in a food product such as a beverage mix or an instant food. In addition, a method is provided for manufacturing the foaming composition in which the protein-free soluble foaming particles are heated and an external pressure exceeding atmospheric pressure is applied to the protein-free soluble foaming particles. The soluble foaming particles are cooled and the external gas pressure is released resulting in pressurized gas remaining in internal voids of the foaming composition.

Claims (45)

1. A foaming composition comprising:

a foaming powdered protein-free soluble composition comprising carbohydrate particles having a plurality of internal voids containing entrapped pressurized gas, said composition comprising greater than 98% carbohydrate on a dry-weight basis and no protein.

2. The foaming composition of claim 1 , wherein the powdered protein-free soluble composition comprises essentially 100% carbohydrate on a dry-weight basis.

3. The foaming composition of claim 1 , wherein the soluble composition releases at least 2 cc of gas per gram of said composition when dissolved in liquid at ambient conditions.

4. The foaming composition of claim 1 , wherein the soluble composition releases at least 5 cc of gas per gram of said composition when dissolved in liquid at ambient conditions.

5. The foaming composition of claim 1 , wherein the soluble composition is selected from the group consisting of a sugar, polyhydric alcohol, sugar alcohol, oligosaccharide, polysaccharide, starch hydrolysis product, gum, soluble fiber, modified starch, modified cellulose, and mixture thereof.

6. The foaming composition of claim 5 , wherein said starch hydrolysis product is selected from the group consisting of a maltodextrin, glucose syrup, corn syrup, high-maltose syrup, high-fructose syrup, and mixture thereof.

7. The foaming composition of claim 1 , wherein said soluble composition further comprises a non-protein surfactant.

8. The foaming composition of claim 7 , wherein said non-protein surfactant is an emulsifier.

9. The foaming composition of claim 8 , wherein the carbohydrate is present in an amount of from greater than 98 to 99.9% by weight and the emulsifier is present in an amount from 0.1% to 2% by weight.

10. The foaming composition of claim 8 , wherein the carbohydrate is present in an amount of from greater than 98 to 99.8% and the emulsifier is present in an amount of from 0.2 to 2%.

The foaming composition of claim 8 , wherein said emulsifier is selected from the group consisting of a polysorbate, sucrose ester, stearoyl lactylate, mono/di-glyceride, diacetyl tartaric ester of mono/di-glyceride, phospholipid, propylene glycol alginate, lipophilic modified starch, and mixture thereof.

12. The foaming composition of claim 11 , wherein said lipophilic modified starch is an octenylsuccinate substituted starch.

13. The foaming composition of claim 8 , wherein the emulsifier is a mixture of a polymeric emulsifier and a low molecular weight emulsifier.

14. The foaming composition of claim 13 , wherein the polymeric emulsifier is a lipophilic modified starch and the low molecular weight is sodium stearoyl lactylate.

15. The foaming composition of claim 13 , wherein the polymeric emulsifier is propylene glycol alginate and the low molecular weight emulsifier is polyoxyethylene sorbitanmonolaureate.

16. The foaming composition of claim 1 , wherein said soluble composition further comprises a dispersed fat.

17. A foaming composition, comprising:

foaming protein-free soluble foaming particles comprising greater than 98% carbohydrate on a dry-weight basis and no protein, the foaming particles having a plurality of internal voids containing entrapped pressurized gas, said particles formed from subjecting said particles to an external gas pressure exceeding atmospheric pressure prior to or while heating said particles to a temperature of at least the glass transition temperature and then cooling said particles to a temperature below said glass transition temperature prior to or while releasing said external gas pressure in a manner effective to trap said pressurized gas within said internal voids.

18. The foaming composition of claim 17 , wherein said foaming particles releases at least 2 cc of gas per gram of said composition when dissolved in liquid at ambient conditions.

19. The foaming composition of claim 18 , wherein the foaming particles releases at least 5 cc of gas per gram of said composition when dissolved in liquid at ambient conditions.

20. A powdered foaming composition, said composition comprising:

foaming particles comprising soluble carbohydrate and surfactant and having no protein, said particles have a plurality of internal voids containing pressurized gas, said pressurized gas forming foam when dissolved in liquid at ambient conditions.

21. The powdered foaming composition of claim 20 , wherein particles release at least 2 cc of gas per gram of said particles.

22. The powdered foaming composition of claim 21 , wherein said particles release at least 5 cc gas per gram of said particles when dissolved in liquid at ambient conditions.

The powdered foaming composition of claim 20 , wherein said carbohydrate is selected from the group consisting of a sugar, polyhydric alcohol, sugar alcohol, oligosaccharide, polysaccharide, starch hydrolysis product, gum, soluble fiber, modified starch, modified cellulose, and mixture thereof.

24. The powdered foaming composition of claim 23 , wherein said starch hydrolysis product is selected from the group consisting of a maltodextrin, glucose syrup, corn syrup, high-maltose syrup, high-fructose syrup, and a mixture thereof.

25. The powdered foaming composition of claim 20 , wherein said surfactant is an emulsifier.

The powdered foaming composition of claim 25 , wherein said emulsifier is selected from the group consisting of a polysorbate, sucrose ester, stearoyl lactylate, mono/di-glyceride, diacetyl tartaric ester of mono/di-glyceride, phospholipid, propylene glycol alginate, lipophilic modified starch, and mixture thereof.

27. The powdered foaming composition of claim 26 , wherein said lipophilic modified starch is an octenylsuccinate substituted starch.

28. The powdered foaming composition of claim 20 , wherein particles further comprise a dispersed fat.

29. The powdered foaming composition of claim 17 , wherein the protein-free soluble foaming particles comprise essentially 100% carbohydrate on a dry-weight basis.

30. A method for manufacturing a foaming composition, said method comprising:

heating protein-free soluble foaming particles comprising greater than 98% carbohydrate and no protein, on a dry-weight basis and having internal voids;

applying external pressure exceeding atmospheric pressure to the protein-free soluble foaming particles;

cooling the protein-free soluble foaming particles; and

releasing the external gas pressure thereby resulting in pressurized gas remaining in the internal voids.

31. The method of claim 30 , wherein said applying external pressure is conducted prior to heating the particles.

32. The method of claim 30 , wherein said applying external pressure is conducted while heating the particles.

33. The method of claim 30 , wherein said heating protein-free soluble foaming particles is conducted at a temperature of at least the glass transition temperature of the particles.

34. The method of claim 33 , wherein said cooling is conducted prior to said releasing the external pressure.

35. The method of claim 33 , wherein said cooling is conducted while releasing the external gas pressure.

36. The method of claim 30 , further comprising spray drying an aqueous solution containing the carbohydrate to form the protein-free soluble foaming particles.

37. The method of claim 30 , wherein said spray drying comprises injecting gas into the aqueous solution.

38. The method of claim 30 , wherein said spray drying is conducted without injecting gas into the aqueous solution.
