Abstract

A combination cooking oven is disclosed comprising a cooking cavity, a controller, thermal heating source, blower assembly, air directing means, deflecting means and a vent assembly wherein speed cooking or slower cooking of food products may be accomplished within the same appliance by movement of a gas baffle.

Claims (89)

1. A convection oven, comprising:

a housing defining a cooking chamber;

conduit means associated with the cooking chamber, the conduit means providing for circulation of gas to and from the cooking chamber;

flow means for causing the gas to circulate;

heating means for heating the gas;

at least first and second gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough;

a movable baffle selectively movable between a closed position, in which the first gas directing means is at least partially closed, and an open position, in which the first gas directing means is fully open; and

microwave cooking means in communication with the cooking chamber.

2. A convection oven, comprising:

a housing defining a cooking chamber;

conduit means associated with the cooking chamber, the conduit means providing for circulation of gas to and from the cooking chamber;

flow means for causing the gas to circulate;

heating means for heating the gas;

at least first and second gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough;

a movable baffle selectively movable between a closed position, in which the first gas directing means is at least partially closed, and an open position, in which the first gas directing means is fully open; and

wherein the second gas directing means directs at least some of the circulating gas passing therethrough in a generally vertical downward direction, the second gas directing means being adapted for causing flows of circulating gas to impinge on a food product located within the cooking chamber.

3. A convection oven, comprising:

a housing defining a cooking chamber;

conduit means associated with the cooking chamber, the conduit means providing for circulation of gas to and from the cooking chamber;

flow means for causing the gas to circulate;

heating means for heating the gas;

at least first and second gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough;

a movable baffle selectively movable between a closed position, in which the first gas directing means is at least partially closed, and an open position, in which the first gas directing means is fully open;

a food support located within the cooking chamber and adapted for supporting a food product; and

a third gas directing means located below the food support.

4. The oven according to claim 3 , further comprising:

a movable baffle selectively movable between a closed position, in which the third gas directing means is at least partially closed, and an open position, in which the third gas directing means is fully open.

5. A convection oven, comprising:

a housing defining a cooking chamber;

conduit means associated with the cooking chamber, the conduit means providing for circulation of gas to and from the cooking chamber;

flow means for causing the gas to circulate;

heating means for heating the gas;

at least first and second gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough;

a movable baffle selectively movable between a closed position, in which the first gas directing means is at least partially closed, and an open position, in which the first gas directing means is fully open;

at least one temperature sensor in communication with the cooking chamber and configured to output a signal indicating a sensed temperature; and

a controller configured for automatically controlling the baffle in response to the sensed temperature.

6. A convection oven, comprising:

a housing defining a cooking chamber;

conduit means associated with the cooking chamber, the conduit means providing for circulation of gas to and from the cooking chamber;

flow means for causing the gas to circulate;

heating means for heating the gas;

at least first and second gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough;

a movable baffle selectively movable between a closed position, in which the first gas directing means is at least partially closed, and an open position, in which the first gas directing means is fully open;

at least one gas flow velocity sensor in communication with the cooking chamber and configured to output a signal indicating a flow velocity; and

a controller configured for automatically controlling the baffle in response to the sensed flow velocity.

7. A convection oven, comprising:

a housing defining a cooking chamber;

conduit means associated with the cooking chamber, the conduit means providing for circulation of gas to and from the cooking chamber;

flow means for causing the gas to circulate;

heating means for heating the gas;

a food support located within the cooking chamber and adapted for supporting a food product;

a first gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough, the first gas directing means being located on a side of the cooking chamber;

a second gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough, the second gas directing means being located above the food support;

a movable baffle selectively movable between a closed position, in which the first gas directing means is at least partially closed, and an open position, in which the first gas directing means is fully open; and

microwave cooking means in communication with the cooking chamber.

8. A convection oven, comprising:

a housing defining a cooking chamber;

conduit means associated with the cooking chamber, the conduit means providing for circulation of gas to and from the cooking chamber;

flow means for causing the gas to circulate:

heating means for heating the gas;

a food support located within the cooking chamber and adapted for supporting a food product:

a first gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough, the first gas directing means being located on a side of the cooking chamber;

a second gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough, the second gas directing means being located above the food support:

a movable baffle selectively movable between a closed position, in which the first gas directing means is at least partially closed, and an open position, in which the first gas directing means is fully open; and

a third gas directing means located below the food support.

9. The oven according to claim 8 , further comprising:

a movable baffle selectively movable between a closed position, in which the third gas directing means is at least partially closed, and an open position, in which the third gas directing means is fully open.

10. A convection oven, comprising:

a housing defining a cooking chamber;

conduit means associated with the cooking chamber, the conduit means providing for circulation of gas to and from the cooking chamber;

flow means for causing the gas to circulate;

heating means for heating the gas;

a food support located within the cooking chamber and adapted for supporting a food product;

a first gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough, the first gas directing means being located on a side of the cooking chamber;

a second gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough, the second gas directing means being located above the food support;

a movable baffle selectively movable between a closed position, in which the first gas directing means is at least partially closed, and an open position, in which the first gas directing means is fully open;

at least one temperature sensor in communication with the cooking chamber and configured to output a signal indicating a sensed temperature; and

a controller configured for automatically controlling the baffle in response to the sensed temperature.

11. A convection oven, comprising:

a housing defining a cooking chamber;

conduit means associated with the cooking chamber, the conduit means providing for circulation of gas to and from the cooking chamber;

flow means for causing the gas to circulate;

heating means for heating the gas;

a food support located within the cooking chamber and adapted for supporting a food product;

a first gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough, the first as directing means being located on a side of the cooking chamber;

a second gas directing means communicating the conduit means and the cooking chamber and configured for directing a flow of circulating gas flowing therethrough, the second gas directing means being located above the food support;

a movable baffle selectively movable between a closed position, in which the first gas directing means is at least partially closed, and an open position, in which the first gas directing means is fully open;

at least one gas flow velocity sensor in communication with the cooking chamber and configured to output a signal indicating a flow velocity; and

a controller configured for automatically controlling the baffle in response to the sensed flow velocity.
