Abstract

The present invention concerns a solid product comprising oil-droplets having a diameter in the range of 0.1 to 100 microns, cross-linked proteins at the interface of said droplets and any polar, low molecular compound in between the cross-linked protein interfaces.

Claims (21)

1. A process for the preparation of a solid oil product, the process comprising:

dispersing an oil in a protein solution to yield an emulsion;

homogenizing the emulsion and washing with water to form a concentrated emulsion;

adding glutaraldehyde or transglutaminase to or heating the concentrated emulsion; and

adding a polar, low molecular interstitial compound to the concentrated emulsion to obtain a solid product comprising oil-droplets having a diameter of 0.1 to 100 microns, cross-linked proteins at an interface of the droplets and the polar, low molecular interstitial compound in between cross-linked protein interfaces, wherein the polar, low molecular interstitial compound is selected from the group consisting of glycerol, saccharose and combinations thereof.

2. The process according to claim 1 , wherein the emulsion is heated at 80° C. for approximately 10 minutes.

3. A process for the preparation of a solid oil product, the process comprising:

dispersing an oil in a protein solution to yield an emulsion;

homogenizing the emulsion and washing with water to form a concentrated emulsion;

adding glutaraldehyde or transglutaminase to or heating the concentrated emulsion, wherein the concentrated emulsion is poured into approximately the same volume of 1% weight glutaraldehyde aqueous solution and then washed to separate non-reacted glutaraldehyde; and

adding a polar, low molecular interstitial compound to the concentrated emulsion to obtain a solid product comprising oil-droplets having a diameter of 0.1 to 100 microns, cross-linked proteins at an interface of the droplets and the polar, low molecular interstitial compound in between cross-linked protein interfaces.

4. A process for the preparation of a solid oil product, the process comprising:

dispersing an oil in a protein solution to yield an emulsion;

homogenizing the emulsion and washing with water to form a concentrated emulsion;

adding glutaraldehyde or transglutaminase to or heating the concentrated emulsion, wherein the concentrated emulsion is poured into approximately the same volume of 1 unit/g transglutaminase; and

adding a polar, low molecular interstitial compound to the concentrated emulsion to obtain a solid product comprising oil-droplets having a diameter of 0.1 to 100 microns, cross-linked proteins at an interface of the droplets and the polar, low molecular interstitial compound in between cross-linked protein interfaces.

5. A process of obtaining a solid oil with inhomogeneous cell composition, the process comprising:

preparing a first concentrated emulsion by dispersing a first oil in a protein solution to yield an emulsion, homogenizing the emulsion and washing with water to form a first concentrated emulsion, adding glutaraldehyde or transglutaminase to or heating the first concentrated emulsion, and adding a polar, low molecular interstitial compound to the first concentrated emulsion;

preparing a second concentrated emulsion by dispersing a second oil in a protein solution to yield an emulsion, homogenizing the emulsion and washing with water to form a second concentrated emulsion, adding glutaraldehyde or transglutaminase to or heating the second concentrated emulsion, and adding a polar, low molecular interstitial compound to the second concentrated emulsion;

mixing the first concentrated emulsion and the second concentrated emulsion; and

exposing the mixed concentrated emulsions to water evaporation in order to produce a gel having cells made from multiple oil phases.
