Abstract

Plants with reduced gluten grains and compositions thereof are disclosed herein.

Claims (13)

1. A wheat plant comprising one or more non-transgenic human induced alterations in a wheat prolamin box binding factor (WPBF) gene in at least the genome, wherein the WPBF gene of the A genome codes for a WPBF protein that is mutated at one or more amino acid positions, said positions selected from the group consisting of Cys 66 , Pro 80 , Gly 84 , Ala 229 , and Gly 252 of SEQ ID NO. 3.

2. The wheat plant of claim 1 , further comprising one or more non-transgenic human induced alterations in a WPBF gene of the B genome.

3. The wheat plant of claim 2 , further comprising one or more non-transgenic human induced alterations in a WPBF gene of the D genome.

4. Wheat grain from the wheat plant of claim 1 , comprising a reduction in gliadin content.

5. Flour comprising wheat grain from the wheat plant of claim 1 .

6. A food product comprising a component of the wheat plant of claim 1 .

7. A wheat seed, plant part or progeny thereof from the wheat plant of claim 1 , wherein said progeny comprises the one or more non-transgenic human induced alterations in the WPBF gene of the A genome.

8. The wheat plant of claim 1 , wherein the WPBF protein that is mutated at one or more amino acid positions has a Cys to Tyr substitution at position 66 of SEQ ID NO. 3.

9. The wheat plant of claim 1 , wherein the WPBF protein that is mutated at one or more amino acid positions has a Pro to Leu substitution at position 80 of SEQ ID NO. 3.

10. The wheat plant of claim 1 , wherein the WPBF protein that is mutated at one or more amino acid positions has a Gly to Ser substitution at position 84 of SEQ ID NO. 3.

11. The wheat plant of claim 1 , wherein the WPBF protein that is mutated at one or more amino acid positions has a Ala to Thr substitution at position 229 of SEQ ID NO. 3.

12. The wheat plant of claim 1 , wherein the WPBF protein that is mutated at one or more amino acid positions has a Gly to Arg substitution at position 252 of SEQ ID NO. 3.

13. Wheat grain from the wheat plant of claim 1 , comprising a reduction in gliadin content, wherein gliadin content is reduced by at least 20% as compared to grain from a wild type wheat plant.
