Abstract

An auxiliary gray water supply device captures used wash water from a commercial warewashing machine for supply to a pre-rinse station without substantial modification of the commercial warewashing machine. The captured wash water and treatment agent are delivered to a pre-rinse station for pre-rinsing of dishes that will be washed within the commercial warewashing machine.

Claims (37)

1. A gray water supply system configured for use in a commercial food service facility having a commercial warewashing machine and a kitchen sink that is located outside of the commercial warewashing machine, the gray water supply system comprising:

a tank comprising:

an inlet configured to receive gray water from a discharge pipe connected with the commercial warewashing machine;

an outlet; and

an overflow outlet;

a screen positioned in the inlet of the tank;

a pump unit configured to pump gray water out of the outlet of the tank;

a prerinse spray nozzle positioned over the kitchen sink that is located outside of the commercial warewashing machine, the prerinse spray nozzle configured to receive the gray water pumped by the pump unit and to discharge the gray water, thereby enabling the gray water to be used for prerinsing dishes outside of the commercial warewashing machine; and

a fresh water dispenser positioned over the kitchen sink, the fresh water dispenser being separate from the prerinse spray nozzle;

wherein the gray water system is configured such that the gray water is maintained separately from, and not mixed with, fresh water within the gray water system.

2. The gray water supply system of claim 1 , wherein the tank is further configured to be positioned below the commercial warewashing machine.

3. The gray water supply system of claim 1 , wherein the gray water tank is an integrated part of the commercial warewashing machine.

4. The gray water supply system of claim 1 , wherein the gray water tank has a bottom surface without openings.

5. The gray water supply system of claim 1 , wherein the inlet of the tank is separated from the discharge pipe by an air gap.

6. The gray water supply system of claim 1 , wherein the screen is configured to move relative to the tank between a first position and a second position, wherein:

in the first position, the screen is positioned to receive the gray water from the outlet of the commercial warewashing machine; and

in the second position, the screen is positioned to not receive the gray water from the outlet of the commercial warewashing machine.

7. The gray water supply system of claim 6 , wherein the screen is configured to rotate relative to the tank between the first position and the second position.

8. The gray water supply system of claim 6 , wherein the screen is configured to slide relative to the tank between the first position and the second position.

9. The gray water supply system of claim 1 , wherein the screen is configured to be removed from the tank.

10. The gray water supply system of claim 1 , wherein the screen is configured to be lifted out of the tank without maneuvering the screen around the discharge pipe.

11. The gray water supply system of claim 1 , wherein the discharge pipe is configured to be pivoted relative to the tank to allow access to the screen.

12. A method of operating a gray water system to rinse dishes in a commercial kitchen prior to placement of the dishes into a commercial warewashing machine, the gray water system comprising a gray water tank, an electric pump, and a gray water dispensation nozzle, the method comprising:

receiving gray water from the commercial warewashing machine into the gray water tank;

supplying, with the electric pump, the gray water from the gray water tank to a pre-rinse station that comprises:

a kitchen sink;

the gray water dispensation nozzle, the gray water dispensation nozzle positioned over the kitchen sink; and

a fresh water dispensation nozzle that is separate from the gray water dispensation nozzle;

dispensing fresh water from the fresh water dispensation nozzle;

dispensing the gray water from the gray water dispensation nozzle of the pre-rinse station to rinse dishes in the kitchen sink; and

maintaining the gray water separately from fresh water, and not mixing the gray water with fresh water, until after dispensing the gray water from the gray water dispensation nozzle.

13. The method of claim 12 , further comprising operating, without first adding liquid into the gray water tank, the commercial warewashing machine.

14. The method of claim 12 , wherein dispensing the gray water from the gray water dispensation nozzle of the pre-rinse station to rinse dishes in the kitchen sink comprises: actuating a foot pedal.

15. The method of claim 12 , wherein receiving gray water from the commercial warewashing machine into the gray water tank comprises: passing the gray water through a screen at an entrance of the gray water tank.

16. The method of claim 12 , further comprising passing the gray water through an air gap between an outlet of the commercial warewashing machine and an inlet of the gray water tank.

17. The method of claim 12 , further comprising transporting the gray water from the commercial warewashing machine to the gray water tank, the gray water tank being laterally spaced apart from the commercial warewashing machine.

18. The method of claim 12 , further comprising transporting the gray water from the commercial warewashing machine to the gray water tank, the gray water tank being positioned underneath the commercial warewashing machine.
