Abstract

The present invention relates to a composition comprising at least one carrier comprising a polysaccharide, at least one antioxidant and at least one amino acid selected from cysteine, lysine, alanine and arginine. It also relates to the use of such a composition for the protection of microorganisms during drying, storage and/or reconstitution, to a culture powder, to a process of making the culture powder and to products comprising the culture powder.

Claims (11)

1. A culture powder composition comprising live microorganisms and a matrix comprising a polysaccharide, at least one antioxidant and at least one amino acid combination selected from the group consisting of;

(i) cysteine that is 2 to 10 wt % of total dry weight of the composition, and alanine that is 8 to 20 wt % of total dry weight of the composition;

(ii) cysteine that is 2 to 10 wt % of total dry weight of the composition, and lysine and alanine that are each 8 to 20 wt % of total dry weight of the composition;

(iii) lysine and arginine that are each 8 to 20 wt % of total dry weight of the composition;

(iv) cysteine that is 2 to 10 wt % of total dry weight of the composition, and arginine that is 8 to 20 wt % of total dry weight of the composition;

(v) cysteine that is 2 to 10 wt % of total dry weight of the composition, and lysine and arginine that are each 8 to 20 wt % of total dry weight of the composition;

(vi) lysine, alanine, and arginine that are each 8 to 20 wt % of total dry weight of the composition; and

(vii) cysteine that is 2 to 10 wt % of total dry weight of the composition, and arginine and alanine that are each 8 to 20 wt % of total dry weight of the composition,

(viii) wherein a dry weight ratio of the matrix:the live microorganisms is at least 1.

2. The culture powder according to claim 1 , wherein the live microorganisms are bacteria.

3. The culture powder according to claim 2 , wherein the bacteria is selected from the group consisting of bifidobacteria, lactobacilli, lactococci, enterococci, streptococci, Leuconostoc, Escherichia , propionibacteria, and combinations thereof.
