Filamentous fungal biomats, methods of their production and methods of their use
A novel method of growing fungi is disclosed which uses an engineered artificial media and produces high density filamentous fungi biomats that can be harvested with a minimum of processing and from which fungal products such as antibiotics, proteins, and lipids can be isolated, the method resulting in lowered fungus cultivation costs for energy usage, oxygenation, water usage and waste stream production.
1. A fungal mycelial biomass, comprising:
aerial hyphae; and
three layers;
wherein:
the fungal mycelial biomass is in the form of a mat, is an essentially pure fungal biomass of a single fungal strain or species, is suitable for use as a food product, and is not viable.
2. The fungal mycelial biomass of claim 1 , wherein the fungal mycelial biomass has a tensile strength of at least 0.05 kg/cm of mat width.
3. The fungal mycelial biomass of claim 1 , wherein the fungal mycelial biomass has a protein content of at least 40%.
4. The fungal mycelial biomass of claim 1 , wherein the three layers comprise:
a bottom layer;
a transition zone layer; and
an aerial hyphae layer; wherein:
the bottom layer is more dense than the aerial hyphae layer, the bottom layer comprises filaments aligned in a first direction and the aerial hyphae are predominantly oriented perpendicular to the first direction.
5. The fungal mycelial biomass of claim 4 , wherein the bottom layer comprises filaments which are predisposed to be aligned parallel to at least one interface selected from the group consisting of a mat/air interface and a mat/medium interface.
6. The fungal mycelial biomass of claim 5 , wherein the aerial hyphae are predominantly oriented perpendicular to the at least one interface.
7. The fungal mycelial biomass of claim 1 , wherein the fungal mycelial biomas has a cell density of at least 25 g dry weight/l media.
8. The fungal mycelial biomass of claim 1 , wherein the mat is 1 mm to 30 mm thick.
9. The fungal mycelial biomass of claim 1 , wherein the mat has a lipid content of at least 39%.
10. The fungal mycelial biomass of claim 1 , wherein the tensile strength of the mat is at least 0.2 kg/cm of mat width.
11. The fungal mycelial biomass of claim 1 , wherein the fungal mycelial biomass further comprises extracellular polysaccharides.
12. The fungal mycelial biomass of claim 1 , wherein the fungal mycelial biomass contains no residual feedstock.
